Skillet Cilantro Honey Lime Chicken

This Skillet Cilantro Honey Lime Chicken has such a wonderfully sweet flavor. It is pan seared and baked to perfection. All the ingredients combine for a perfectly seasoned sweet and flavorful sauce.
  • 5-6 chicken thighs
  • 2 limes, juiced
  • 3 Tablespoons minced garlic
  • ¼ teaspoon Cayenne pepper
  • 2 teaspoons salt
  • ½ teaspoons pepper
  • ¼ cup honey
  • ⅓ cup oil
  • ¼ cup cilantro, chopped
  • ¼ cup honey
  • ¼ teaspoon salt
  • 1 Tablespoon lime juice
  • 1 Tablespoon cilantro, chopped
  1. In a small medium glass bowl combine lime juice, minced garlic, Cayenne pepper, salt, pepper, honey, oil, and cilantro. Seal tight and shake until well combined. Add chicken cover and marinate for 3 to 4 hours, or over-night.
  2. Preheat oven to 350 degrees F.
  3. Heat large cast iron skillet to medium high heat. Add 3 Tablespoons oil and the chicken.
  4. Cook the chicken 3 minutes per side until golden brown. Place skillet in the oven and bake for 35 to 40 minutes.
  5. While the chicken is cooking, combine glaze ingredients in a small bowl.
  6. When chicken is completely cooked removed from oven and brush with glaze and serve.
