Jalapeño Popper Potato Skins

These Jalapeño Popper Potato Skins are a fabulous appetizer or side dish. It is jam packed with flavor with the perfect amount of heat and cool. These are a hit wherever and whenever they are served!
Ingredients
  • 5 medium potatoes
  • 12 ounces cream cheese, softened
  • 5 Tablespoons chopped jalapenos
  • 1 teaspoon salt
  • 1½ cups shredded cheddar cheese
  • ½ cup cooked and chopped bacon
Instructions
  1. Preheat oven to 450 degrees F.
  2. Wash potatoes and poke them with a fork a few times.
  3. Place in oven, (not covered with foil) and bake at 450 degrees F for about 30 minutes or until the potatoes are tender to squeeze. (Baking time will depend on the size of your potato)
  4. Let cool for 30 minutes
  5. Slice the potatoes in half, lengthwise.
  6. Scoop out the inside of the potatoes about ¼ an in to the skin. (You can use the inside of your potatoes for some yummy mashed potatoes)
  7. Generously salt and pepper the inside of your potato skins and set aside.
  8. In a medium bowl beat cream cheese until smooth.
  9. Add jalapeons and salt and mix again.
  10. Divide and spoon cream cheese mixture into your potato skins evenly.
  11. Spinkle cheese over the cream cheese.
  12. Top with bacon and bake for 10 minutes until warm.
