Spinach Artichoke Lasagna

This Spinach Artichoke Lasagna is so rich, creamy and tastes INCREDIBLE! This recipe will quickly become a new family favorite!
  • 9 lasagna noodles, cooked according to package directions
  • 3 cups fresh chopped spinach
  • 3 cups chopped artichoke hearts, marinated in water or frozen and thawed
  • 6 cups cooked and chopped chicken breasts
  • 3 cups mozzarella, grated
  • ¼ cup butter
  • ¼ cup flour
  • 3 cups heavy cream
  • 2 cups milk
  • ½ teaspoon white pepper
  • 2 cups grated parmesan cheese
  1. In a large sauce pan, melt butter. Add flour and cook for 1 minute over medium heat. Add cream, milk and pepper. Bring to a boil and remove from heat and then add parmesan cheese. Return to the stove and cook on low for 2 minutes. Remove from heat and set aside.
To assemble
  1. Preheat oven to 350 degrees F.
  2. Spray a 9x13 in baking dish with vegetable spray.
  3. Lay 3 noodles on the bottom of baking dish.
  4. Sprinkle 1 cup spinach over the noodles.
  5. Sprinkle 1 cup chopped artichokes over the spinach.
  6. Next sprinkle 2 cups chicken over the artichokes.
  7. Pour ⅓ of the sauce over the spinach.
  8. Sprinkle 1 cup mozzarella over the sauce.
  9. Repeat these steps two more times.
  10. Bake for 45 minutes to 1 hour at 350 degrees F or until it is heated all the way through.
