Key Lime Sheet Cake

This Key Lime Sheet Cake is a tart and sweet cake with a delicious creamy frosting. It has a light and refreshing flavor and is loved by all who try it! If you love the citrusy flavors, then this cake is for you!
Ingredients
  • 2 cups flour
  • 2 cups sugar
  • ½ cup butter
  • ½ cup shortening
  • ½ cup water
  • ½ cup key lime juice
  • ½ cup buttermilk
  • ½ teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla
FROSTING
  • ½ cup butter
  • 4 Tablespoons milk
  • 2 Tablespoons key lime juice
  • 3 cups powdered sugar
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 400 degrees F.
  2. Spray a 15x10x1 inch baking sheet with cooking spray and set aside.
  3. In a large mixing bowl, measure flour and sugar. Set aside.
  4. In a medium sauce pan, combine butter, water, and shortening. Bring to a boil. After mixture reaches a boil, add key lime juice. Next add the flour/ sugar mixture and stir to combine.
  5. Add buttermilk, then baking soda, then eggs, then vanilla in that order, mixing in-between each addition.
  6. Pour into a greased cookie sheet and bake at 400 degrees F for 20 minutes
  7. Frosting
  8. Combine butter, and milk in a medium sauce pan and bring to a boil, stir in key lime juice, powdered sugar and vanilla until smooth.
  9. After cake has cooked cool for 15 minutes, and poke holes in cake with a fork. Spread frosting evenly over the top of the cake.
