These Lemon Sugar Cookie Bars are so soft and have such a light and refreshing flavor! The frosting on top is the perfect finishing touch for a delightful and tasty dessert!
- 1 cup butter, softened
- 4 ounces cream cheese, softened
- 1½ cups sugar
- 1 egg
- 1 teaspoon lemon juice
- 1 Tablespoon Lemon zest
- 1 teaspoon vanilla
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 2¼ cups flour
Frosting
- ½ cup butter, softened
- 2 cups powdered sugar
- 3 Tablespoons milk
- 1 Tablespoon lemon juice
- ¼ teaspoon salt
- 1 teaspoon vanilla
- Preheat oven to 350 degrees F.
- In a large bowl, cream butter, cream cheese and sugar together.
- Add egg and beat well.
- Add lemon juice, lemon zest, vanilla and mix until well blended.
- Add salt, baking powder, soda and flour and mix until well incorporated.
- Spray a 10x15 inch jelly roll pan with vegetable spray and press dough evenly into it with the palm of your hand.
- Bake at 350 degrees F for about 20 minutes or until slightly golden.
- Cool completely.
Frosting
- In a medium size mixing bowl add all frosting ingredients and mix on low for 1 minute. Turn mixer on high and beat until smooth and creamy. Spread frosting over cooled bars.
