Mini Chocolate Bundt Cakes

These are an extremely moist chocolate cake with a delicious cream cheese frosting on top. It makes for an easy and tasty personal size treat!
Ingredients
  • 1 chocolate cake mix
  • 1 small box (3.9 oz) instant chocolate pudding mix, dry
  • ½ cup sugar
  • ½ cup sour cream
  • 4 eggs
  • ¾ cup vegetable oil
  • ¾ cup water
  • 1 teaspoon vanilla
Cream Cheese Frosting
  • 12 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl combine all the ingredients and mix for three minutes.
  3. Spray bundt pans with Baking Joy.
  4. Fill each bundt cake about ½ full.
  5. Bake at 350 degrees F for 16 to 18 minutes. Watch them closely after 16 minutes, the time may vary depending on your oven.
  6. Let sit in the pans for 3 minutes before turning them out. Cool on a wire cooling rack.
Cream Cheese Frosting
  1. Combine all ingredients and beat until smooth and creamy.
  2. Spoon frosting into a piping bag and pipe frosting over the top of cooled cakes.
  3. Sprinkle with mini chocolate chips.
