Grasshopper Mint Brownies |

Mint Brownies
- 4 ounces unsweetened chocolate
- 1 cup butter
- 4 eggs
- 2 cups sugar
- 1 cup flour
- ½ teaspoon salt
Mint Frosting
- 6 Tablespoon butter, softened
- 3 cups powdered sugar
- 3 Tablespoons heavy cream
- 1 Tablespoon mint extract
- ¼ teaspoon vanilla
- 4 drops green food coloring
Chocolate Ganache
- 1½ cups semi sweet chocolate chips
- ½ cup heavy cream
- 2 teaspoons vanilla
Mint Brownies
- Preheat oven to 350 degrees F.
- Grease 9x13 baking pan.
- In a microwave safe bowl, melt chocolate and butter together in 30 second increments, stirring in between each increment until melted.
- Mix in eggs and sugar until smooth.
- Add flour and mix until well incorporated.
- Pour batter into 9x13 and bake at 350 degrees F for 20-25 minutes.
Mint Frosting
- In a medium mixing bowl, cream butter. Add powdered sugar, milk, mint extract, vanilla and green food coloring and beat until smooth.
- Spread over the top of cooled brownies.
Chocolate Ganache
- Combine semi sweet chocolate chips and cream in a small microwave safe bowl. Heat in 30 second incriminates, stirring between each increment until melted smooth. Stir in vanilla.
- Spread over frosting.
