Grasshopper Mint Brownies

Ingredients
Mint Brownies
  • 4 ounces unsweetened chocolate
  • 1 cup butter
  • 4 eggs
  • 2 cups sugar
  • 1 cup flour
  • ½ teaspoon salt
Mint Frosting
  • 6 Tablespoon butter, softened
  • 3 cups powdered sugar
  • 3 Tablespoons heavy cream
  • 1 Tablespoon mint extract
  • ¼ teaspoon vanilla
  • 4 drops green food coloring
Chocolate Ganache
  • 1½ cups semi sweet chocolate chips
  • ½ cup heavy cream
  • 2 teaspoons vanilla
Instructions
Mint Brownies
  1. Preheat oven to 350 degrees F.
  2. Grease 9x13 baking pan.
  3. In a microwave safe bowl, melt chocolate and butter together in 30 second increments, stirring in between each increment until melted.
  4. Mix in eggs and sugar until smooth.
  5. Add flour and mix until well incorporated.
  6. Pour batter into 9x13 and bake at 350 degrees F for 20-25 minutes.
Mint Frosting
  1. In a medium mixing bowl, cream butter. Add powdered sugar, milk, mint extract, vanilla and green food coloring and beat until smooth.
  2. Spread over the top of cooled brownies.
Chocolate Ganache
  1. Combine semi sweet chocolate chips and cream in a small microwave safe bowl. Heat in 30 second incriminates, stirring between each increment until melted smooth. Stir in vanilla.
  2. Spread over frosting.
