Almond Joy Brownies

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • ½ teaspoon salt
  • 2 teaspoons vanilla
  • ½ cup cocoa
  • 1⅓ cups flour
Coconut Filling
  • ½ cup evaporated milk
  • ½ cup sugar
  • 12 large marshmallows
  • 5 oz. shredded sweetened coconut
Chocolate frosting
  • 1½ cups sugar
  • ½ cup evaporated milk
  • ½ cup butter
  • 12 oz. milk chocolate chips
  • 1½ cup toasted chopped almonds
  1. Preheat oven to 350 degrees F.
  2. Cream butter and sugar together in a large mixing bowl. Add vanilla and eggs and mix well. Add salt, cocoa powder and flour and stir to well combine. Do not over mix.
  3. Pour into a greased 9x13 inch pan.
  4. Bake at 350 degrees F for 22-25 minutes.
Coconut Filling
  1. In a medium sauce pan, bring evaporated milk and sugar to a boil. Reduce heat to low and stir in marshmallows until melted and smooth. Remove from heat and stir in coconut.
  2. Spread over cooked and mostly cooled brownies. Set aside.
Chocolate frosting
  1. In a medium sauce pan, combine sugar, evaporated milk and butter and cook over medium heat until sugar is dissolved, stirring constantly.
  2. Once sugar is melted, remove from heat and stir in milk chocolate chips.
  3. Drizzle over cooled coconut filling.
  4. Sprinkle toasted almonds over the top of frosting.
