Pistachio Pudding Salad

An easy and delicious side dish to any meal!
  • 1 (3.4 oz) box Pistachio pudding, dry
  • 1 (20 oz) can crushed pineapple with juice
  • ¼ cup chopped pecans
  • ¼ cup sweetened coconut, (optional- my family prefers it without)
  • 1 cup mini marshmallows
  • 1 (8 oz) tub cool whip
  1. Mix dry pistachio pudding mix, crushed pineapple and juice, chopped pecans, coconut and mini marshmallows together in a large bowl.
  2. Fold in Cool whip. Store in fridge.
  3. This recipe may be made a day ahead
