Easy Baked Corn

This is another one of the recipes my grandma has passed down to our family. Not sure where it originated from, but she has had it since my mom was a little girl. I had never tried it before, but after months of her persisting me, I decided to give it a go. I had previously never heard of “baked” corn and was a little nervous to try it. However, it was delicious and super easy to make.

My husband loves corn and so this recipe is definitely on our side dish rotation now. Our kids even gobbled their serving up! If you are looking for a new side dish or a new way to dress up corn (or maybe you have already tried making a version of this recipe and I am just way behind the times) give this recipe a try!

Serves: 4
Ingredients
  • 1 cup milk
  • 2 Tablespoons butter
  • 1 Tablespoon sugar
  • 2 Tbsp. flour
  • ½ tsp. salt
  • 2 (15 oz.) can whole corn, drained
  • 2 eggs, well-beaten
Instructions
  1. Dissolve flour in ¼ cup milk.
  2. Boil ¾ cup milk with butter and sugar.
  3. Pour flour mixture into the milk milk mixture after boil is reached to make a thin white sauce.
  4. Remove from heat and stir in salt and drained corn.
  5. Mix in eggs.
  6. Pour into a 1 to 1½ quart loaf pan.
  7. Bake at 400 degrees F for 30 minute for until done.

    This looks delicious! How much frozen or fresh corn would you use in place of the canned?

      Anna, a 15 ounce can of corn contains 1 and 3/4 cup of corn. If you are using frozen, thaw it before measuring and drain the liquid.

    Love this recipe! I cooked it today 7/15/2014 and it came out great. I adjusted the amounts because I used 3 cans instead of two for the corn. I also added some cheese on top when baking it. I wish I could post a picture but cant. But the kids love it so its a keeper.

      This recipe looks similar and just as delicious but it's not cornbread casserole. As others have mentioned, this is more like a corn pudding.

    My aunt has made something very similar to this for as long as I can remember. We call it corn pudding and it is one of my favorite sides! She fixes it every holiday get together and there's never any left! Good choice!

    Similar to my recipe:
    1 stick of butter
    1 small carton of sour cream
    1 can corn drained
    1 can creamed corn
    1 box jiffy corn muffin mix
    Preheat oven to 350
    Melt butter in 9x9 pan
    Stir in remaining ingredients and bake for 40 minutes or until set.

    This is also known as scalloped corn. You can also use 1 can creamed corn and 1 can regular corn, just reduce the amount of milk to make up for the liquid in the creamed corn.

    This is also called Corn Casserole and Corn Souffle and has been around for centuries. The cooks in Shakertown, now a preserved community and museum, served it to soldiers from the North and South during the Civil War when the troops camped out on their farmland. I use their recipe which can be made a day before, and does not require boiling anything. It is better than any other I have tried or made; including Paula Deen's version. They are still serving the centuries-old recipe at the sought-after restaurant in Pleasant Hill, Ky. I live in Orlando, but miss great Southern cooking found there.

    Grew up with this but made with 1 whole kernel, 1 cream style,1 egg, diced onion, salt and pepper,crushed crackers over top with dabs of butter and bake.

    This is absolutely delicious!!! Being it is corn season, I tried it with fresh corn. I made a second one using canned corn. hey, it was for a potluck! it was such a big hit and everyone liked the fresh corn one better so I am going to freeze some in portion baggies for this winter. Thanks!

    If using fresh corn would I have to cook it on the cob first and then add it to recipe? Or can I add it uncooked? Thanks... with so much fresh corn available I'd love to try this recipe. Also I'm assuming if the recipe calls for "2 15 oz cans" which equal 1 3/4 cups that would make it 3 1/2 cups fresh... correct? Thanks!!!

    I was surprise when I found this recipe . My mother has been making this recipe for years she turned it over to my wife and now we enjoy it every holiday . My wife and I have been married for 35 years so you know how long we have had the recipe in the family , that's why I was shocked when I seen the recipe on the Internet .

    This is also called Corn Pudding and with a few modifications could be a corn souffle. Delicious in all its different ways.

    I've made this for years for Thanksgiving and other times throughout the year.... Got my recipe years ago from the Michigan Growers....it's instructions we just to put the drained corn in the greased pan, slightly beat the eggs, melt the butter, then mix it all together...and pour over the corn.... it's always turned out great! Just thought I'd mention to save steps of boiling the milk and making the white sauce first.... it's really not needed... but it's a wonderful recipe!

    I made this recipe today,but I tweeked it a little by adding 4 green onions sliced up, green and white portions.I also added 500 grams of boneless chicken breasts ( cut into cubes )marinated with ginger-garlic paste,salt and pepper.I topped it all off with cubed Velveeta cheese.The aromas wafting out of the oven are simply divine !!!!!

    Did you use all purpose or self rising flour? Didn't want to ruin what looks like a very tasty recipe. I've never seen this one but it sounds a little like the one my mom used to make with Nifty corn muffin mix. Thanks for sharing.
