Butterscotch Toffee Cookies
Cookies are one of my favorite go to treats! They are simple, make a lot and loved by everyone.
These cookies are packed with Butterscotch and Toffee flavor and are absolutely irresistible.
I came across this recipe in my Taste of Home Magazine and instantly fell in love! The texture is wonderful with a chewy cookie and little bits off toffee and butterscotch chips scattered throughout in each and every bite.
If you are looking for a standout cookie, this is a fantastic choice!
Butterscotch Toffee Cookies

Serves: 5 dozen
Ingredients
- 2 eggs
- ½ cup oil
- 1 butter pecan cake mix
- 1½ cup butterscotch chips
- 2 cups milk chocolate English toffee bits
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, beat cake mix, oil, and eggs. Stir in chips and toffee bits. Drop by tablespoofuls onto a greased cookie sheet.
- Bake at 350 degrees F for 10 to 12 minutes.

Made the cookies which were delicious. I used Betty Crocker cake mix. My batch came out crunchy and took 17 minutes to bake and they also spread during baking. Timer was set for 12 minutes and kept increasing by the minute until the batter was cooked and even took them out of the oven, looking a little soft. Every cookie was still crunchy--my husband like crunchy, I like soft cookies. Anyone else get crunchy?

Just finished making these as a treat for my husband who loves butterscotch. They turned out beautiful and super tasty. I used a tbs cookie scoop and was only able to yield just shy of 3 dozen. Also had to cook for 13 minutes and I usually have to cut recipe times short.

A very good cookie and very easy to make. A few bags of 'goodness' and voila, excellent cookie if you like butterscotch! I love the crispness to the cookies.

Theses were great, I read the reviews so I used butter in stead of oil and added chocolate chips as well then left the dough in the fridge for a while! Make sure not to over bake, because the toffee bits get hard when they cool!! But very good!
