Butterscotch Toffee Cookies
Cookies are one of my favorite go to treats! They are simple, make a lot and loved by everyone.
These cookies are packed with Butterscotch and Toffee flavor and are absolutely irresistible.
I came across this recipe in my Taste of Home Magazine and instantly fell in love! The texture is wonderful with a chewy cookie and little bits off toffee and butterscotch chips scattered throughout in each and every bite.
If you are looking for a standout cookie, this is a fantastic choice!
Butterscotch Toffee Cookies
These cookies are packed with Butterscotch and Toffee flavor and are absolutely irresistible.

Ingredients
- 2 eggs
- 1/2 cup vegetable oil
- 1 butter pecan cake mix dry
- 1 1/2 cups butterscotch chips
- 2 cups milk chocolate english toffee bits
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, beat cake mix, oil, and eggs. Stir in chips and toffee bits.
- Drop by tablespoofuls onto a greased cookie sheet.
- Bake at 350 degrees F for 10 to 12 minutes.

Betty Crocker makes a Butter Pecan cake mix. I haven't tried this recipe yet so don't really know if this butter pecan cake mix will work. Hope so

Made the cookies which were delicious. I used Betty Crocker cake mix. My batch came out crunchy and took 17 minutes to bake and they also spread during baking. Timer was set for 12 minutes and kept increasing by the minute until the batter was cooked and even took them out of the oven, looking a little soft. Every cookie was still crunchy--my husband like crunchy, I like soft cookies. Anyone else get crunchy?

Just finished making these as a treat for my husband who loves butterscotch. They turned out beautiful and super tasty. I used a tbs cookie scoop and was only able to yield just shy of 3 dozen. Also had to cook for 13 minutes and I usually have to cut recipe times short.

I made these this weekend! These are my new favorite cookies. They have so much flavor! Chewy and moist. Good warm or cold. I tweaked the recipe a bit. I used butter instead of oil and used an ice cream scoop instead of a tablespoon. The recipe made about 30 cookies. Plan an making again this weekend for my daughters weekend get away. Curios if you have used another flavor of cake mix to make these.

I just made these delicious cookies this morning . I thought the dough was a little wet so I added 2 tbsp of flour. They came out perfectly with very little spreading. I also used melted butter instead of oil. My family LOVED them.

Has any one tried freezing the baked cookies? I often like to save a few batches in the freezer and was curious how these would freeze up.

Theses were great, I read the reviews so I used butter in stead of oil and added chocolate chips as well then left the dough in the fridge for a while! Make sure not to over bake, because the toffee bits get hard when they cool!! But very good!

I found the Butter Pecan cake mix today at Walmart other wise I was going to use a yellow cake mix and add rum extract or a pecan extract

I made these cookies. They are very tasty, I just don't like them so crunchy. They get hard once they cool. Is there a way to have them a little less hard. Other than that they are good. Maybe less toffee.

I used butter cake mix instead, and I've used butter cake mix & added finely chopped pecans when in a hurry with no time to order butter pecan mix. Co-workers raved every time!

Great trick..put batter in the refrigerator for 30 minutes before baking .Return batter to refrigerator between batches.. The cold butter holds up and cookies don't run. Cookies are richer and decadent.

I love these cookies but any time I make them they definitely spread a lot and are crunchie…how do I make them softer and not spread so much?
