Twix Truffle Brownies

My favorite Candy Bar is hands down Twix. I love the caramel, shortbread, chocolate combo.

I was brainstorming some ideas a couple weeks ago and then this brilliant one hit me. I am obsessed with my Oreo Truffle Brownies… yummy brownie, oreo truffle filling topped with chocolate. Why not make a Twix version?!

Oh. My. Gosh. Time to break out the stretchy pants… This recipe will completely knock your socks off. If you love the components of Twix, then you will LOVE this recipe!

This recipe is a fudgy chocolate brownie topped with a shortbread cookie truffle, gooey caramel and melted chocolate… yeah, its pretty amazing :)

Ingredients
Brownies
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ cup unsweetened cocoa powder
  • 1⅓ cup flour
Shortbread Truffle Layer
  • 1 (10 oz.) box Lorna Doone's Shortbread Cookies
  • 6 oz. cream cheese, softened
  • ½ cup sugar
Caramel Layer
  • 14 oz. bag of caramel cubes, unwrapped
  • 2 Tablespoons milk
Chocolate Layer
  • 1½ cups milk chocolate chips
  • ½ cup semi-sweet milk chocolate chips
  • 1 Tablespoon shortening
Instructions
Brownies
  1. Preheat oven to 350 degrees F.
  2. Cream butter and sugar together in a large mixing bowl. Add vanilla and eggs and mix well. Add salt, cocoa powder and flour and stir to well combine. Do not over mix.
  3. Pour into a greased 9x13 inch pan.
  4. Bake at 350 degrees F for 22-25 minutes.
Shortbread Truffle Layer
  1. Place cookies in a food processor until fine powder. Mash in cream cheese and sugar until mixture is well combined.
  2. Gently press shortbread truffle evenly over cooled brownies.
Caramel Layer
  1. Place caramel cubes and milk in a medium microwave safe bowl. Microwave in 30 second increments until melted, stirring in between each increment until melted and smooth.
  2. Evenly pour over shortbread truffle layer.
  3. Place in fridge to let it cool.
Chocolate Layer
  1. Combine chocolate chips and shortening together in a medium microwave safe bowl. Microwave in 30 second increments, stirring in between each increment until melted and smooth.
  2. Evenly spread over the top of cooled caramel layer.
  3. Let set up in fridge before cutting into.

    I'm not a caramel Twix fan but I LOVE peanut butter Twix so I'm going to do mine with some sort of peanut butter layer.

    I've got these in the oven now. I'm up to 30 min. of baking time and the center is still extremely gooey. What am I doing wrong? The batter seemed extremely thick, more so than normal brownie batter. Anyone else have this issue?

      I did! I had to keep mine in the oven for like 35 minutes!

    Ok, I made these last night - they look soooo good. I don't know what I did wrong thought because the caramel is not gooey, it is so hard to cut the cake and to eat it. Should I have added more milk to them when melting? Otherwise it is superb. Thanks

      Unfortunately, I would not sub out the cream cheese. The texture and concept of the truffle will not be the same. I am so sorry. I wish I could be of more help.

    I just made these! I followed the recipe exactly and they turned out great - they are SUPER rich though. If you are bringing them to a party/work, cut them into 1" bite sized pieces because that's seriously all you need! I love Twix + brownies and this is a such a delicious combo of the two

    i happened upon this site randomly and tried these brownies out. the folks in my office have renamed them "crack brownies" and i get constant requests for them. i made them as is the first time, but since have stopped making the truffel layer and just layer the cookies dry and un-crushed to give it more of the twix feel in addition ot the twix taste.

    Sadly the brownie and shortbread layers will not stay together; the whole thing is falling apart. Time consuming to make for the result. Disappointing.
