Pineapple Upside Down Cake
Pineapple Upside Down Cake is hands down one of my all-time favorite cakes! Caramel sauce, yellow cake, pineapple and cherries… I mean, whats not to love?!
This recipe couldn’t be easier! It whips up in no time at all and is eaten almost faster than its made! Every time we make this recipe, people can’t stop gobbling it up! It is a total crowd pleaser and a beautiful presentation with the pops of red color.
If you have not tried this cake yet, I highly encourage you to do so! You a will absolutely LOVE it!

Pineapple upside down cake is one of my faves and I hadn't made one until about 6 months ago when my 7 year old said she had never had it before. Whoops! How did that happen! So I had to make it and now seeing yours, I need to make another one :) Pinned!

To make an even more flavorful cake, save the juice from the pineapple and use that in place of the liquid called for in the cake recipe. If there is not quite enough, top it off with water

What's yellow cake mix? Don't think I can get it. ..

For extra flavor I substitute the water in the cake mix with the juice drained from the pineapple. I have also skipped the cherries & used crushed pineapple so you can get fruit in every bite. Yummo!

If you use the crushed pineapple how much do you use?
Colleen
I drain the juice to use in the cake mix and use the whole can of crushed pineapple-the large can not the small one. After you melt the butter(never margarine!) and adding the brown sugar just spoon the crushed pineapple as evenly as you can over the bottom of the pan.

This was one of my mom's favorite cakes to make when I was growing up and I LOVE how you included the cherries inside the pineapple rings! Just how it should be...
Keith
Reserve the juice packed with the pineapple rings if using canned pineapple. Add water to it to make the total liquid required by the mix directions. It adds even more pineapple flavor and sweetness to the cake.

When I make pineapple upside down cake, I use individual pyrex 1-cup dishes. They are lovely to serve guests.

You can also use a Pineapple Cake Mix! I've been making it this way for years! Yum! Thanks for sharing your recipes!

If you do not have a 10 inch round pan, what pan do you suggest using?
Samantha
can you substitute another cake pan size? Also, The instructions on cake mix box does not have a bake time for a 10 inch pan only 8, 9, & 13x9- please advise- thanks!

Do you have a recipe for the cake part? I am not a fan at all of boxed cakes. Thanks.
Maria
I make this cake all the time. However, I add pecans in the space between the pineapples. ( half size pecans)

Do you think I can make this in a 10" pie plate or a 8x8 square dish??? My cake pans are packed away.
