Chicken Cacciatore

One of my goals for this year is to make dinner more often around my house. I know what you are thinking… “You’re Chef in Training, you cook ALL the time!” I wish I could say we ALWAYS sit down to the dinner table to a meal I cooked from scratch, but the truth of the matter is sometimes I bake desserts for the blog and get burnt out of my kitchen and cooking long before dinner time comes around. Having 19 weeks of morning sickness and meat being the one thing that sent me to the bathroom also made it difficult to want to cook dinner. Seriously. I didn’t even eat any turkey or meat on Thanksgiving. Sad right? On these days we go out to eat or do something super simple like spaghetti. I really want to try and have a meal ready for my family way more often. 

This meal is jam packed with delicious flavor and veggies. The chicken is super tender and filled with the delectable juices that all the ingredients combine to create.

    What fancy results for something that doesn't take all day to make --I love it. I can relate to being burned out on cooking + pregnancy aversions. It is just so easy (and nice) when my husband says tell me what you want and I will go pick it up. This month I am trying my hardest to not make excessive grocery store trips or heading out for take-out. All the ingredients for this dish are even sitting in my fridge/pantry now. I must give it a try!

    We all get burned out from cooking, it's only natural...especially when you have small children!! This chicken looks delicious and perfect for a quick meal. :)
