Cake Batter Pudding Cookie Bars

I am obsessed with cake batter and pudding cookies. I am also a huge fan of minimal work. Let me introduce you to a recipe that combines ALL THREE of those things!

Sometimes I think cake batter can cure any and all problems of the world. Okay, maybe not really for the world, but it can cure just about anything for me. I had an epic disaster occur this week. I tried to paint my faux wood book shelf. After completing it 100%, it looked beautiful! My sister and I went to assemble the shelves back in place and as we did this, the paint peeled a way. Kind of like a banana peel so easily peels away from a banana. It was effortless and so devastating. HOURS of hard work peeled away before my eyes. Thats when I popped one of these bad boys in my mouth and I instantly felt better :) If any of you crafters have an idea how to paint faux wood, please pass it along to this non-crafter :) Any help would be greatly appreciated haha!

Back to these Cake Batter Pudding Cookie Bars. I adapted my cake batter pudding cookies into bars and my family raved non stop about them. They are super soft, super tasty and full of that wonderful cake batter flavor we all love so much. They also make up in not time at all! Forget rolling out each cookie, your smash it down into the pan and wha-lah! Cookie bars that are just as good but take a fraction of the time! Make them and enjoy them! You will be happy you did :) For the extra sweet-tooth people out there, smear some frosting over top. Wouldn’t that be pretty?!

NOTE: I do recommend a stand mixer for this recipe as the batter is pretty thick. I have used hand mixers before with no problem, but a few others have had problems with their mixers not holding up to the thickness of the batter.

Cake Batter Pudding Cookie Bars
 
Soft, cute delicious bars that your whole family will love!
Recipe type: Dessert
Ingredients
  • 1 cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 (3.4 oz) box INSTANT Vanilla Pudding mix, dry
  • 1 tsp. vanilla
  • 1 tsp. almond extract
  • 2 eggs
  • 1 tsp. baking soda
  • ¾ cup yellow cake mix
  • 2 cups bread flour
  • 1 cup white chocolate chips
  • ⅓ cup sprinkles
Instructions
  1. Combine baking soda, yellow cake mix and bread flour into a small to medium size bowl and set aside.
  2. Cream butter in the bowl of stand mixer.
  3. Add brown sugar and granulated sugar and cream into butter.
  4. Add dry pudding mix and mix until well incorporated.
  5. Add vanilla, almond extract and eggs to the mixture and beat well.
  6. Add flour/cake mix mixture and mix until well incorporated.
  7. Add white chocolate chips and sprinkles and mix just until evenly distributed.
  8. Press dough evenly onto the bottom of a greased 9x13 inch baking pan. Sprinkle and lightly press additional sprinkles over the top if desired.
  9. Bake at 350 degrees F for about 20 minutes or until top is golden brown.

    I love how these are a mix of wonderful flavors and various textures - the bread flour, the pudding mix, the cake mix, with tons of sprinkles and white chocolate. And almond extract <-- my fave! Pinned!

    First these are amazing!!! I want one right now! Second did you sand the faux wood first? The Paint needs something to cling to. If you sand it and rough it up it will create a surface that is not so slick and the paint will sink into the groves. Hope you get it to work!!!

    The recipe, as usual, sounds delish, Thanks for sharing.
    As for the paint problem, have you tried Annie Sloan's Chalk Paint? Not blackboard paint, paint that is made with chalk. It is a bit pricey, but when you consider you don't have to prime or sand, the justifies the extra $$ for me! I am quite sure it will work on your piece, but you can call someone that carries it in your state and ask first. We have used ASCP quite a bit without sanding or priming and we have not had a problem. A lot of bloggers/furniture painters use it and love it. hth

      You can totally swap out all purpose flour for bread flour in this recipe :)

    About the banana-peel paint job, using a primer first should keep the paint adhered to the wood. Might have to go over the piece lightly with some sandpaper...the can of primer should tell you the best things to do.

    Can I do this using vanilla extract instead of almond or will that mess with the recipe? I've heard almond can be really over powering and the person I'm baking for isn't a huge fan of nuts...
