Recipes for Cinco de Mayo

My dad is half Greek and half Mexican and needless to say, he grew up with very authentic ethnic meals.  In fact, most of his time growing up was spent in Greece with my grandma (his mom)… up until high school, when he moved to Texas to live with my Grandpa (his dad).   Then for college, he moved to California where he met my blond-haired, blue-eyed mother in the Mexican restaurant that they both worked at.  They were married a few years later and being the amazing cook that my mom is, she taught herself how to make the dishes that my dad loved, both Mexican and Greek… and the best part, she would make them even better than the originals in my opinion :)

Our entire family is huge Mexican Food Fanatics!  We could eat it for every meal and never get sick of it :)  Cinco de Mayo was a huge celebration in my home growing up.  Appetizers, side dishes, dinners, desserts… the whole works!
