Chocolate Cupcakes with Peanut Butter Frosting

Hi! My name is Lisa and I am The Bearfoot Baker. I am so happy to be here today sharing a recipe I made. I have a friend named Anna who shared some cupcakes with me last year and I couldn’t stop thinking about them. They were so good I decided to try to make my own version. What makes them so unforgettable is the Peanut Butter Frosting with a Reese’s Cup on top! We all know everything is better with a cherry on top so it has to be even better with a Reese’s Cup on top, right? YES! It is much better with a Reese’s Cup on top! Trust me:)

You won’t believe how easy it is!

My aunt Trudy taught me homemade frosting is great on a box cake mix. I make cakes from scratch all the time, but for these cupcakes, a box mix will work just fine and save you some time.

First, make the cake following the directions on the back of the box. While they are baking, you can prepare your frosting.

Peanut Butter Frosting with a Reese’s Cup on Top

Ingredients:

1 Cup Peanut Butter

2 ounces (half a stick) of unsalted butter

4 cups Powdered Sugar

1/2 cup Milk

1 tsp Pure Vanilla Extract

For the frosting, gather all your ingredients.

Next, mix the butter and peanut butter together.

Then, mix half the milk and half the powder sugar. Mix until well combined. Repeat using the remaining milk and powdered sugar.

Next, pipe your icing on top of your cooled cupcake.

Cut a few Reese’s Cups to make the cupcakes even more delicious!

    Does the frosting need to be refrigerated? I would assume so because of the milk... I am making it now for a cake but don't have enough room to fit the cake in my fridge!

    Do you mean a different measurement of butter? A stick of butter is 10 oz.

    The directions forget to add the vanilla. If you don't gather all ingredients ahead of time you may forget to add it.

    These are delicious!! I had a problem though. I put them in the fridge overnight. 3 hours before the party I took them out due to needing to chill other party snacks. My icing melted. Like it completely started rolling off the sides. Was sooo embarrassed, glad I took a before pic to show that I did do awesome on them!
