Needing Your Thoughts and Prayers

I thought I would just give you an update so you know why if my posting schedule gets off.  You may have noticed that I typically post a recipe every day.

I am posting this to let you know I will still be posting, I just don’t know how regular it will be.  My husband was life flighted to the University of Utah Hospital where he is being treated for Guillain Barre Syndrome.  His current condition is pretty serious and my mind and thoughts are with him.  The good news is that he will make a full recovery, the hard thing is that we don’t know when that will be or how much his condition will worsen before we make it over the hump.

I am definitely going to be posting because I find cooking and baking to be a huge stress reliever, and these days, I think I am going to be needing some stress relief.  My mom (the chef I aspire to be) is also going to be cooking a lot to help me out in keeping up my blog.

Please keep our family in your thoughts and prayers, we could definitely use them right now.  Thank you so much!

I also wanted to say how much I appreciate the support I receive from you for my blog!  This blog has been such a blessing to me and my family and I truly appreciate your support!  It means more to me than you will ever know.

Thank so much!

-Nikki

If you make this recipe, snap a photo and hashtag it #chefintraining and/or #chefintrainingblog. I would love to see how these recipes take shape in your kitchens.

Nikki-My thoughts and prayers are with you and all you love. I have walked a somewhat similar path---and I want to offer some encouragement and hope as I am sure you are feeling overwhelmed at this point. Check out Stephen Minisitry. A Stephen Minister is just an person whose been through 60+ hrs of training to LISTEN, ENCOURAGE, SUPPORT...someone whose going through a difficult time. We're just people who have gone through rough times, survived, and want to offer hope and encouragement to others (you're not beat over the head with the Bible!) It's free-it's non-denominational, one on one (woman to woman, man to man), for as long as you need it. Just call your local churchs & ask if they are Stephen Ministry congregation or know of one in your area. Or contact SM directly-google them-they are located in St Louis. I am a trained Stephen Minister and Stephen Leader. My SM got me through my late husband's cancer journey. She was a "neutral" party-someone I could unload on and not feel as if I were taxing a family member or friend. It was invaluable to me. If you want more info, please e-mail me at sentbysharon@aol.com. In the meantime, prayers here for you and yours. Blessings, Sharon

Hi Nikki, my mom was diagnosed with GBS several years ago and thanks to an awesome medical team and a daughter who would not take "no" or "we don't know" for an answer she has recovered remarkably well. She only still carries small remainders of the illness with her daily. Mom can't drink from a glass without a straw because the muscles on the one side of her face don't work so well. You cant notice it unless she is really tired because then the left side droops a little and she battles with her left leg. It gets like a pins and needles sensation in it which at times is a little painful. However, those are so minor when I think what this disease could have done...we received a lot of support and a lot of prayers were said and most of all we believed that she would be fine.So coming from that I can say that I know what you are going through, I know how scary the diagnoses and prognosis can be. I fully understand how surreal it is dealing with doctors and not understanding half of what they are saying. I also know that the power of prayer is the one constant that keeps you on your feet and gets you through the tough times.I am praying for you and your family as you face this difficult time. May God bring you peace and comfort and may He guide the hands of the doctors treating your husband.Keep us posted as and when you can. God Bless

  85. Ali

Hi there...I am a faithful Chef in Training blog reader and two years ago I was diagnosed with CIDP the chronic form of GBS...my life has changed...but I am learning so much from this illness...one being that it is so important to make sure you are eating the best that you can...fruits and veggies in large-LARGE quantities help tremendously!!! I have also switched to doing my own baking and trying as much organics as possible!!! Another being that you need to surround yourself with as many positives as you can...life is a gift and when you start living it as though...wonderful things do happen!! Stay positive and take of yourself as well as your husband. If I can help answer any questions, please do not hesitate. Like I said, life will change...but you WILL find the good in it!! Prayers for you and your family!!
