Cafe Rio’s Lime Cilantro Rice

Today, I have yet another great Cafe Rio recipe to share with you!I know a lot of you have probably never heard of Cafe Rio.  It is a Mexican Restaurant that has some of the best food I have ever eaten.  I seriously crave it weekly!  If you have never been, or have been but have since moved away, try out some of these recipes!  You are going to love them!This Lime Cilantro Rice is seriously SO good!  It works great for the Cafe Rio inspired salads and burritos, or maybe as a side dish to one of your own Mexican meals.  We LOVE this rice in our home, and I am sure you will too!

 

CAFE RIO’S LIME CILANTRO RICE
recipe from: The Girl Who Ate Everything

2 Tablespoons Butter pepper to taste
1 ¼ cup rice (I used long grain)
juice and zest from 1 large or 2 small limes
2 ¼ cups chicken broth
2 Tablespoons chopped cilantro
¾ teaspoon salt
¼ teaspoon cumin

In a skillet melt butter with rice.
Add lime juice, lime zest, chicken broth, cilantro, salt, and cumin.
Bring to a boil, reduce heat, cover and cook for 20 minutes or until rice is done.

    I've tried so many copycat for Chipotle's Cilantro Lime Rice but they've all turned out horrible - I look forward to trying this one (love the addition of cumin!) even though I've never heard of Cafe Rio. The rice looks delicious! :)

    I made this in my rice cooker. The lime was so infused when I put all the ingredients in my rice cooker to cook, that when I made that all we could taste was lime. For those who love the rice cooker, wait to add the lime until you serve it and be conservative when adding it to your ride.
