Better than Anything Chex Mix

You know that type of food, that even looking at it brings on the calories, but when you take a bite you decide that every calorie is worth it?  This recipe is one of those foods.  WORTH. EVERY. BITE!

I recently went out of town for a girls getaway and while I was gone, someone different had my hubby and daughter over every night for dinner.  So, what better way to thank them for their kindness than sending over some “Better than Anything Chex Mix”?!  There is no better way and there is also no better way to eat your calories.  Make it. Love it. Repeat.  DELICIOUS!

 

I could not for the life of me find Chocolate Chex cereal at any of my grocery stores, so I improvised and used Rice Chex cereal and Cocoa Krispies.  The outcome was still just as fabulous!

 

BETTER THAN ANYTHING CHEX MIX
recipe from: Quick Fix

8 cups Chocolate Chex cereal (If you can’t find them like me, I used 6 cups Rice Chex Cereal and 2 cups Cocoa Krispies)
3/4 cup packed brown sugar
6 Tbsp. butter
3 Tbsp. Light Corn Syrup
1/4 tsp. baking soda
1 cup MINI Reese’s Peanut Butter Cups
1 cup mini marshmallows
1/2 cup caramel bits
1 Tbsp. heavy cream
1/2 cup milk chocolate chips (more if you would like)
1/2 cup white chocolate chips1 tsp. coarse sea salt.

Pour measured cereal into a large microwaveable bowl.
Line cookie sheet with waxed paper or foil.
In 2-cup microwaveable measuring up, microwave brown sugar, butter and corn syrup uncovered on high for 1-2 minutes, stirring after 1 minute, until melted and smooth.  Stir in baking soda until dissolved.  Pour caramel mixture over cereal, stirring until evenly coated.
Microwave on high for 3 minutes, stirring every minute.  Spread on cookie sheet.  Cool 10 minutes.
Break into bite-sized pieces.
Make sure Chex mixture is cool to the touch (so candy doesn’t melt). Evenly sprinkle mini peanut butter cups candy and mini marshmallows over the Chex mixture.
In a small microwaveable bowl, microwave caramel baking bits and cream uncovered on high for 1 minute or until chips can be stirred smooth.  Use a spoon or fork to drizzle over Chex mixture.
Repeat with milk chocolate baking chips and again with the white baking chips.
Quickly sprinkly coarse ssalt over all the chex mixture while candy drizzles are still wet.Refrigerate until set. Break apart and store in tightly covered container.

      Supposedly Kraft makes/sells them. See this link: http://www.kraftbrands.com/caramels/products/default.aspx I would maybe just buy the caramels and cut them small, since they're going to be melted anyway.

      You can buy the Kraft caramel bits at Wal-Mart. They are great for other recipes that call for caramel (no unwrapping)!

    When melting the chocolate and white chocolate chips do you add some heavy cream to help them melt better....I never have luck when melting chocolate in the microwave.

    I throw darts on a league and one of the ladies brought a batch of this in for us. Hands down, one of the best tasting mixes I've ever had. She used the cinnamon instead of chocolate covered chex and it tasted AMAZING! *licking fingers still*

    My Daughter made this for Super Bowl Sunday. I snuck a piece before halftime dinner. I couldn't wait to get back to it, so I made up an excuse that something in the dinner was too spicy. This move saved lots of space for the snack. The second half of the football game I enjoyed the most. I just sat and watched the game eating this wonderful snack.

    The Better Than Sex Chex Mix recipe is most confusing, to say the least!!!!
    What caramel “mixture” are you referring too? Only caramel mentioned in the ingredients is caramel BITS and it says to spoon caramel bits and heavy cream ,which you have Microwaved, on AFTER you sprinkle the marshmallows on????? Something is missing. When do you put the Caramel’s on?

    What is the trick to melting white chocolate? It clumps up.

      melt and stir in short increments, every 15 seconds. Once it is 80% or so melted, quit melting it and just stir it until it all melts. Hope that helps!
