Cinnamon Friendship Bread

I was first introduced to this bread the week before Christmas.  My hubby flew out of town the week of Christmas for business, so I packed up my kids and we headed down to my parents a few days early since we were going down anyways.  While I was there, one of my mom’s cute friends dropped off a loaf of this bread and between my mom, my sister, my brother, and myself, the loaf was pretty much gone 5 minutes upon arrival!  We all LOVED it!  Well needless to say, the next day we got the recipe and made some more to deliver ourselves. We added a yummy almond glaze to it and it we all agreed it was a delicious finishing touch!The original recipe was called, “Yule Log”, but my mom and I changed the name to “Cinnamon Friendship Bread” because the recipe makes 3 loaves, perfect to take to neighbors, friends, family, or someone you think is in need of a smile.

CINNAMON FRIENDSHIP BREAD

1 Tbsp. yeast
1/4 cup warm water
2 cups milk
1/4 cup butter, melted
1/4 cup sugar
1 egg
5 cups flour, divided
1 Tbsp. salt

Dissolve 1 tbs yeast in ¼ c. warm water in mixing bowl .
Heat 2 c. milk til very warm.
Stir in 1 egg, ¼ c sugar & ¼ c butter, cool 2 min & add to bowl.
Add 3 c. bread flour and beat on high until it is collected on the beater, not the bowl.
Switch to dough hook and add 2 c. more flour and 1 TBS salt.
Knead til smooth. Less flour is better than too much. You want the dough quite sticky.
Put dough into greased bowl, & cover with saran wrap.
Let rise until doubled in a warm place.Form three 8 x 12 rectangles.
Spread each with 2 TBS butter and 1/4 c cinnamon sugar.
Roll up lengthwise and place seam down on a baking sheet.
Make shallow slashes to give a bark like effect.
You can use an egg wash for shiny bark.Bake at 375, 20-25 min.

ALMOND GLAZE

1 cup powdered sugar
3 Tbsp. Heavy Cream
1 tsp Almond Extract
1/8 teaspoon salt

    Has anyone tried just regular, all-purpose flour for this? I know you can substitute, but I'd be so sad if this didn't turn out as yummy-scrumptious as it looks!Thanks!Ada :)

      I used unbleached all-purpose flour and had wonderful results. It was a cold February day here...so I baked and took a loaf to my daughter and her family. In one loaf I added golden raisin. for my husband. For the filling I added a bit of brown sugar and a little less white sugar.It is delicious and thank you for the recipe.
