Cafe Rio’s Creamy Tomatillo Dressing

One of my favorite things about Cafe Rio is their Creamy Tomatillo Dressing!  It is DELICIOUS!  I saw this recipe and had to try it.  Let me tell you, it tastes EXACTLY like Cafe Rio’s!  I am so excited to have this recipe and will be making it often!

Creamy Tomatillo Dressing

Prep Time 10 minutes
refrigerate 30 minutes
Servings 20

Ingredients 

  • 1 envelope buttermilk ranch dressing mix dry
  • 1 cup mayonaise
  • 1 cup buttermilk
  • 1 bunch cilantro
  • 2 tomatillos husked
  • 1 jalapeno rib and seeds removed
  • 1/8 teaspoon garlic powder
  • 2 Tablespoons lime juice

Instructions

  • Blend mayo, dressing mix, buttermilk, and garlic in a blender until blended and smooth.
  • Dice up tomatillos, jalapeno, cilantro and place in the blender.
  • Juice up the lime and add that to the blender.
  • Blend up all ingredients until smooth and creamy.
  • Chill in the refrigerator for at least 30 minutes.

    I love Cafe Rio. I live in NJ but have a friend that lives in Utah and took me there. I fell in love with the cilantro lime vinaigrette and have tried to recreate it several times. I have come close. I swear I could drink that dressing. @Lyndsay - you should totally try making your own dressing. It is very simple and so much healthier than store bought. When you look at the ingredients list for bottled dressing it is like a science experiment.
