Chicken Stuffing Bake

My younger sister came over yesterday and we were trying to decide what to have for dinner.I pulled out that Diet Taste of Home Cookbook I told you about earlier and saw that I had all the ingredients for this delicious meal.

This was a really simple yummy dinner!

CHICKEN STUFFING BAKE

1 (10.75 oz) can condensed reduced-fat reduced-sodium cream of mushroom soup, undiluted
1 cup skim milk
1 (6 oz) box stuffing
2 cups cubed cooked chicken
2 cups fresh broccoli florets, cooked
2 celery ribs, finely chopped
1-1/2 cups (6 oz) shredded reduced-fat Swiss cheese, divided

In a large bowl, combine soup and milk until blended.  Add stuffing mix with contents of seasoning packet, chicken, broccoli, celery, and 1 cup cheese.  Transfer to a greased 9×13 baking dish.Bake, uncovered, at 375 F for 20 minutes or until heated through.  Sprinkle with the remaining cheese; bake 5 minutes longer or until cheese is melted.Yield: 8 servings

    I have made this recipe a whole bunch of times... The only problem I have is not eating the whole thing in one day! However, I hate swiss cheese, so I use shredded parmesean instead and I also add sauteed mushrooms and onions. It's even great without the chicken. :)
