Almond Rolo Cookies

While staying with my family, my sister had come down one day to visit too.  She said one of her friends made some amazing cookies that she wanted to try.Her and I tag teamed and made these cookies!They were really amazing!  We made them with Rolos, but she says they are supposedly even better when you use Carmellos!  Either way, I LOVED them!

ALMOND ROLO COOKIES

3/4 cups butter (or 1-1/2 sticks)
3/4 cups sugar
3/4 cups brown sugar
2 eggs
1/2 tsp salt
1/2 tsp soda
1/2 tsp vanilla
1/2 tsp almond extract
2-1/2 to 3 cups flour
3 large Carmello bars
1 square per cookies or
1 bags of rolos

Preheat oven to 350 F.
Cream together softened butter and sugars. Add in eggs, vanilla and almond extract and mix. Add dry ingredients until well blended.
Take a Rolo, or Carmello, and fold cookie dough around it to make a ball.
Bake 350 F for 8-10 minutes

    How are you cookies so flat and cookie like looking. Mine puff up and are more cakey like still good but not what one is wanting in a cookie, any hints on what I could be doing wrong?
