Cookie Dough Brownies

Tonight we are doing a progressive dinner with a couple of our friends.  We are the Dessert House.

For one of the desserts served, I wanted to make something I hadn’t made for them before and came across this recipe at The Farm Girl.  It looked amazing!

I made a few changes to the brownie recipe (I have a favorite brownie recipe that I always use) but other than that, it is pretty similar!

COOKIE DOUGH BROWNIES
recipe from: The Farm Girl

1 cup butter
2 cups sugar
4 eggs
1-1/2 tsp vanilla
1/2 cup cocoa
1-1/3 cups flour
1/2 tsp salt

Filling:
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup mini semi-sweet chocolate chips

Glaze:
2 cups milk chocolate chips
2 tablespoons shortening
3/4 cups walnuts, optional

Cream butter and sugar together.  Add eggs and blend well.  Add vanilla, salt, cocoa, and flour.  Don’t over-beat.  Pour into a greased 9×13 pan.  Bake at 350 F for 20-25 minutes or until done.  Cool completely.

For filling, in a large bowl, cream butter and sugars until light & fluffy. Beat in milk and vanilla. Gradually beat in flour. Stir in mini chocolate chips. Spread over brownies (works best to just press out with clean hands.); chill until firm.

For glaze, in a microwave safe bowl, melt chocolate chips and shortening in 30 second intervals, stirring after each time, until smooth. Spread over filling. Immediately sprinkle with nuts, pressing down slightly.

Let glaze harden before cutting in.

Enjoy!

If you make this recipe, snap a photo and hashtag it #chefintraining and/or #chefintrainingblog. I would love to see how these recipes take shape in your kitchens.

    1. Kaylene

I put mine in the fridge as there is milk in the cookie dough layer. They still stay nice and soft!

  66. Julia

Made these today...very good! doesn't take much to fill you up they turned out rich in flavor! thanks!!!!

  67. Lisa

This is a VERY confusing recipe to read..... For example, I tried to make the glaze and had to guess at how much chocolate to put in.

    1. Chef in Training

sorry about that. when i switched over to wordpress all my old recipes got jumbled up. I am slowly getting them all straightened out. sorry i didn't get to this one in time. I hope it still turned out for you :)

  68. Wanda

Awesome !!! I bake alot and love to try different recipes. These were bang on ! I followed the recipe exactly without any problems. They make a large pan, so I froze some of them and they were even better eaten right from the freezer. This recipe is a keeper !

  69. Dalme Retief

Do you not bake the brownie filling even though it has a cup of flour in or have I missed something please forgive me if this is a dumm question

  70. Leslee Ziegler

These look amazing! Do they need to be kept in the fridge?

  71. Kaylene

I had to double the cookie dough layer as it wouldn't spread over my entire 9x13 brownie! But it was VERY yummy!
