Cake Batter Pancakes

I was looking for fun new recipes the other day that my little girl would enjoy too and came across this recipe and HAD to try it out! We love funfetti cake at my house so these were a hit!  Be forewarned, they are REALLY sweet!

Seriously though…How perfect are these for a birthday breakfast?!

CAKE BATTER PANCAKES
recipe slightly adapted from: How Sweet It Is
makes about 12 pancakes

1 1/2 cups all purpose flour
1 cup yellow cake mix
1 tablespoon sugar
2 Tablespoons brown sugar
t teaspoon baking powder
1/8 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1-2 cups milk
sprinkles

In a large bowl, combine flour, cake mix, baking powder, sugar and salt and stir to evenly combine ingredients.
Add 1 cup of milk, egg and vanilla extract and whisk together until smooth. Gradually add more milk, a little at a time, as needed to reach pancake consistency. 
Also taste test to see if you need more cake mix. Add more as needed to reach desired cake-mix flavor. Whisk as needed to combine ingredients together.
Add desired amount of sprinkles and gently stir to evenly incorporate.
Preheat a skillet or griddle to medium heat.
Pour batter to make pancakes onto griddle and let cook about 2-3 minutes. Flip pancakes and let cook until other side is golden brown in color. 
Serve with vanilla glaze.

GLAZE
1 cup powdered sugar
1/2 tablespoon milk
1/2 teaspoon vanilla extract
assorted sprinkles

Combine all glaze ingredients together in a medium bowl. Whisk together until smooth. Add more milk/powdered sugar until desired consistency is reached. Top over pancakes!

    I made these for my daughter this morning and we shared them with her uncle, they both absolutely loved them! What's more, they didn't take any longer to make than her normal breakfasts so this may become a favourite go-to treat recipe.
    She was blown away and kept asking if it was a birthday breakfast as it tasted sooo good!
    We used white cake mix as we'd run out of yellow, still think it tasted fab!

    These look great,, but adding all these extra ingredients seems so tedious to me. Why not just add sprinkles to regular pancake mix? They would be less sweet.
    OR
    I use cake mix (any flavor you want) with all the ingredients from the box, just cut back on some of the water to make waffles. The grand-babies LOVE them. There is really no need to add 5 or 6 extra ingredients.. As you can tell I'm a LAZY cook, and I'm always looking for short cuts.....
