Overnight Blueberry French Toast

I was looking for something new and fun for breakfast and stumbled upon this recipe and now it has become a breakfast staple in my home. I love that it can be prepared the night before and popped in the oven the next morning!  Not to mention the delicious blueberry syrup!  It is AMAZING!

 

and topped with the blueberry syrup….MmmMm!

Overnight Blueberry French Toast

An easy breakfast to throw together the night before and pop in the oven in the morning! It is so yummy!
Prep Time 15 minutes
Cook Time 30 minutes
Refrigerate 8 hours
Servings 16
Calories 308kcal

Ingredients 

  • 12 slices texas toast french bread can also be used
  • 8 ounces cream cheese cut into cubes
  • 1 cup blueberries
  • 12 eggs
  • 1/3 cup maple syrup
  • 2 cups milk can use cream
  • 1 teaspoon vanilla

Syrup

  • 1 cup sugar
  • 1 cup water
  • 2 Tablespoons cornstarch
  • 1 cup blueberries
  • 1 Tablespoon butter

Instructions

  • Arrange 1/2 of the bread cubes in a greased 9 x 13 pan.
  • Sprinkle cream cheese cubes and blueberries evenly over the bread cubes.
  • Top and evenly sprinkle with remaining bread cubes.
  • Mix together eggs, syrup, milk and vanilla in a large bowl.
  • Pour over bread cubes. Press the bread cubes slightly down to absorb the milk/egg mixture. Cover pan with foil. Let chill in refrigerator overnight.
  • Bake covered with foil at 350 degrees for 30 minutes. Remove the foil and bake for another 30 minutes or until fluffy and golden. Top with blueberry syrup.

Syrup

  • In a medium saucepan over medium heat, cook water, sugar, and cornstarch until thickened.
  • Stir in blueberries and simmer for 10 minutes.
  • Add butter and stir until melted. Serve over the french toast.

    I personally did not care for this recipe. It came across tasting too processed. The folks at work that tend to eat more processed foods or have sweet tooths thought it was great, but this is not something I would make again.

    I made this for Christmas but I cut the cream cheese in half. I made it again yesterday and I put raspberries in instead of the blueberries and added a "good" 1/3 cup of sugar. The raspberry one was fabulishes! Also only 1/2 of the cream cheese it calls for.

    This is really tasty. I made it with sprouted bread, which is what I had on hand, added some fresh nutmeg and used all heavy cream and it is great. My 2-year-olds are gobbling it up, right now. The syrup is too sweet for me, but I'll adjust that next time. Thanks for sharing!

    I have used this recipe for years. In fact entered it into a Recipe Contest held each year and was a finalist. Had to bake it up and take the recipe for final juding and took 1st. place in the Brunch catagory and 2nd place over all. My oldest granddaughter entered it in a bake off at their church when she was just 12 and took the grand prize with it. This was always on our Christmas Brunch table. So easy to just pop in the oven on Christmas morning Would just do up some bacon and sausage patties and we were good to go. Since we now celebrate Christmas on Christmas Eve rather than Christmas Day I miss doing this for Christmas morning. So I would always do it up for our last day of work before the holiday break so we could have it for our morning break. All the ladies I worked with loved it.

    Hate to say it, but I made this and it was DISGUSTING. I don't know if it's because I used frozen blueberries, or if my oven isn't working right. I wasn't expecting it to taste so much like egg. It tasted like egg with blueberries on top. It was mushy as can be too. I would have been better of making regular french toast and with the blueberry syrup.

    I have made this recipe every year for about 10 years, as part of my Christmas Brunch . My family always asks for it and we love the next day leftovers! Almost to good to be breakfast, but more like dessert. Make a day ahead and so easy to just pop in the oven in the morning. YUMMY!

    I just made this overnight blueberry french toast for my parents and friends this morning and it was such a HIT! Everyone complimented me on it but it was actually so easy to make! I actually added raspberries to this and it gave it a nice tangy kick! Definitely will be making this again!

    I made this with 1/4 cup plain Greek yogurt and 1-3/4 cups 2% milk because I didn't have cream and wanted a rich texture. I didn't make the blueberry syrup because we canned some last summer, but it really pulled the flavors together and would be worth the time to make. Overall great dish that would be wonderful for when company comes or for bunch. I will cut the recipe in half when its just the 2 of us though. (You know its good when I write the recipe and tape it to the inside of the pantry door!)

    have been making this recipe for years. One comment from the past that I follow is to take your bread and spread the cream cheese on it and dot with blueberries and place in pan. Then proceed as written. That way the cc is spread out and you don't get a mouthful.

      I cut the cream cheese in very small chunks. So never a mouthful. I think it adds to the recipe..

    Outstanding recipe!! My company loved it. I served with maple and blueberry syrups. I used a little more liquid ( 1 egg and 1/2 cup cream) as the Texas Toast seemed to need it. So easy to make. And making at night really makes company breakfasts so much easier. It is truly a chef's dish!!

    I would do the syrup a little differently. Actually, I would double the blueberries in the recipe and put none in the syrup. The Maple Syrup I would put it in a double boiler and reduce it and add a stick of butter and vanilla extract. I prefer Arrowroot as a thickener. Whisk it until it gets thick. Serve it in a hot stoneware pitcher. Boil water and fill the pitcher for 5 minutes. Dump the water and wipe it dry and add the syrup. Gosh, this is making me hungry thinking about it!!

    I thought of one more addition that I plan on making. When we have a sweet breakfast like this one it is great to balance it with something salty. I am going to cook a few pounds of sausage links by steaming them so all the fat drips through my strainer pot. When cooked I will put the sausage in an ice bath to bring it to room temp. Then I will add it to the french toast bake and add the recipe and pop it in the fridge. I think the sweet and saltiness will go nicely together.

    OMG you just made my day :-) we was told my hubby had to work night shift this Christmas we are planning on having his family over for breakfast. We always have dinner with them but being in Australia it platters of food and salads easy stuff. I was like i can't just give them a box of cereal can i. Came across your post and you have blown me away with this recipe thank so much i am going to try it before hand to see what its like.

    made this for football brunch today for the first time and it was a huge hit -what a nice change of pace from all the regular brunch fare - I used french bread and half & half and it was wonderful! I also didn't make the syrup as given and just used some pure maple syrup I had on hand!

    Making this for the second time. It was divinely awesome!

    do you leave the french toast after it's made in the refrigerator and also with the blueberry syrup do they both need to be refrigerated

    I’ve been making this recipe for years. In fact, I have two casseroles in the oven right now! One is going with me to the mountains tomorrow for a “Girls’ Week”. The other I’ll freeze for the holidays.
    It never fails to be a hit. I use 1 and 1/2 (12 oz.) of cream cheese, light cream in place of milk, and a bit more than a teaspoon of vanilla. Delicious!!
