Zucchini Pancakes

My mom used to make this for an after school snack all the time.

I love these bad boys! Especially topped with sour cream! MMMMM! It fulfills that salty craving exactly the way you want it!

ZUCCHINI PANCAKES

2 c. shredded zucchini
1/2 c. finely chopped onion
1 c. flour
1/2 c. mayonnaise
1/2 c. Parmesan cheese
4 eggs, beaten
1 tsp. lemon juice (opt.)
Salt & pepper to taste

Mix all ingredients together lightly. Pour onto hot griddle like you would pancakes.
Serve with sour cream and Enjoy!
