Grape Salad … …

First, I want to thank all those who responded to my guest post request!  I had over 60 responses and am overwhelmed by how much support you all show my blog and me!  Second, Along the lines of your support, I hit my 1000 FOLLOWER mark today!  I am ecstatic!Thank YOU!Derek’s grandma taught me this recipe!  I love this salad!  Its great for pretty much any event!  BBQ, party, or your own dinner!  My family LOVES this side dish!  Grandma always uses Grape Nuts to top it, but I didn’t have any on hand so I tweaked the topping a little but it is still fabulous any way you do it!GRAPE SALAD2 lbs red seedless grapes2 lbs green seedless grapes1 (8 oz) block cream cheese (softened)1 cup sour cream1/2 cup sugar1 tsp. vanillaTopping:Grape NutsOR1 cup brown sugar TT1 cup chopped pecans TTWash and stem grapes, set asideMix cream cheese, sour cream, sugar and vanilla together by hand.Stir grapes into mixture, and stir until coated.Pour into large serving bowl.Cover and Chill overnight in refrigerator.for topping, combine brown sugar and chopped pecans.  Or when ready to serve top with Grape Nuts.Enjoy!

Oreo Stuffed Chocolate Chip Cookies …

I came across this recipe and knew I had to give it a try!  I was reading some of the comments about the recipe, and several people had problems with it spreading and the cookie looking like it had a growth on it.  The original recipe called for butter, and I don’t know about you, but when working with butter in cookies, I notice I tend to get a flatter cookie.  It is not always a problem, but for these cookies, flatter is not better.  I changed the recipe up a bit and they turned out great! My husband gobbled them up!side note: These cookies will be HUGE! Mmmm!OREO STUFFED CHOCOLATE CHIP COOKIES• 1 cup shortening• 1 cup packed light brown sugar• 1/2 cup granulated sugar• 2 large eggs• 2 tablespoon vanilla extract• 3 cups flour• 1 teaspoon salt• 1 teaspoon baking soda• 1 cup semi-sweet chocolate chips• 1 package Double Stuff Oreo cookiesPreheat oven to 350 degrees.In a large bowl, cream shortening, brown sugar, and granulated sugar together with a mixer until well combined. Beat in eggs and vanilla.In medium bowl mix the flour, salt, and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.With a cookie scoop, form balls with the dough.Place one ball on top of an Oreo cookie, and another ball on the bottom. Seal edges together by pressing and cupping in hand until Oreo cookie is fully enclosed with dough.Place onto parchment or silpat lined baking sheets and bake cookies for approximately 13 minutes or until golden brown. Slow Cooker Ham ‘n’ Swiss …

Recently, my mom gave me several Taste of Home cookbooks.  Their recipes are my ABSOLUTE favorite! This recipe came from one of those cookbooks.  To me it tastes like a version of chicken cordon bleu, just with less effort!  Because really, what crock pot meal is not less effort?!It was easy and delicious!here’s the recipe:SLOW COOKER HAM ‘N’ SWISS CHICKEN2 eggs2 cups milk, divided1/2 cup butter, melted1/2 cup chopped celery1 tsp finely chopped onion8 slices bread, cubed12 thin slices deli ham, rolled up2 cups shredded Swiss cheese2 1/2 cups cubed cooked chicken1 can cream of chicken soupIn a large bowl, beat the eggs and 1-1/2 cups milk.  Add melted butter, celery, and onion.  Stir in bread cubes.In a separate bowl, mix the can of cream of chicken soup and 1/2 cup milk until well blended.In a 3 qt. slow cooker layer:half of the bread mixturehalf of sliced rolled-up hamhalf of cheesehalf of chickenhalf of soup mixtureremaining bread mixtureremaining slices of rolled-up hamremaining cheeseremaining chickenremaining soup mixtureCover and cook on low for 4-5 hours or until a thermometer inserted into bread mixture reads 160 FMakes 6 servings.Enjoy!
