We really enjoyed this meal!It is also a weight watchers recipe, so who wouldn’t love that?!BUBBLE UP ENCHILADASfound recipe on: Recipe DiariesNutrition  Info: Calories 390 | Fat 11.5g | Carbohydrate 36g | Fiber 2g | Protein 33gServes 6Weight Watcher Recipes 6 points (old points)1 pound ground turkey1 (10 ounce) can enchilada sauce1 (8 ounce) can tomato sauce1 can reduced fat refrigerator biscuits1 ΒΌ cups shredded low fat Mexican CheesePreheat oven to 350 FBrown Turkey and drain juices if neededPour and mix enchilada and tomato sauce over browned turkey.Cut refrigerated biscuits into fourths and stir into meat mixture.Dump into a greased 9X13 casserole pan and bake for 25 minutes.Take out of oven and sprinkle cheese on top.  Bake for an additional 10 minutes.Let stand for 5 minutes.Enjoy!Linking up to these parties and here

Blueberry Snack Cake … …

Growing up, this was always one of my favorite “after-school-snacks” that my mom would make.I love anything with blueberries!This recipe comes from a Taste of Home Cookbook that I own.BLUEBERRY SNACK CAKE2 cups all-purpose flour1-1/2 cups sugar1/2 cup cold butter or margarine1 tsp baking powder1 cup milk2 eggs, separated2 cups fresh or frozen blueberries**In a mixing bowl, combine flour and sugar.  Cut in butter until crumbly.  Set aside 3/4 cup for topping.  Add the baking powder, milk and egg yolks to remaining mixture; mix well.  Beat egg whites until soft peaks form; fold into batter.Pour into a greased 9×13 pan.  Sprinkle with blueberries and reserved crumb mixture.Bake at 350 F for 30-35 minutes or until golden brown and a toothpick inserted near the center comes out clean.Yeild 15-18 servings**If using frozen blueberries, do not thaw before adding to the batter.Enjoy!Linking up to these parties and here
