 I have said it before and I will say it again, mushrooms are my absolute FAVORITE vegetable! To me, cooked and tender mushrooms are one of the best things on the dinner table!

This Creamy Mushroom Soup is one of my top 3 favorite soups! The flavors in this recipe compliment one another perfectly and the smooth creamy texture truly knocks this recipe out of the park.

If you love mushrooms, even if you are on the fence with mushrooms, make this soup! You WILL NOT regret it!

Ingredients
  • ½ cup butter, divided
  • 16 ounce mushrooms, sliced or chopped depending on how you like to eat them ( I like Shiitake Mushrooms)
  • ½ teaspoon garlic salt
  • ¼ cup flour
  • 2½ cups half and half
  • 2 cups heavy cream
  • 2 Tablespoons dry minced onions
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. In a large sauce pan melt ¼ cup butter. Add mushrooms and garlic salt. Cook until mushrooms are tender. Drain and set aside.
  2. In a large sauce pan over medium heat, melt ¼ cup butter. Add flour and cook for 1 minute. Slowly add half and half and heavy cream. Add minced onions, garlic powder, salt and pepper. Bring to a boil and cook for 2 minutes. Add mushrooms and serve.

    I use Cream of Mushroom soup in recipes & I have been looking for a good homemade version that I could keep on hand in my freezer instead of having to use the canned stuff. This looks like it'd do the trick!

      I'm not sure that a person can freeze creamed soups. Maybe someone else can give an opinion.

      You can freeze cream soups. They separate when thawed but come back when reheated

    I adore mushrooms too! One of my biggest pet peeves is when I invite someone over for dinner, make something that has mushrooms in it, and watch them PICK OUT THE MUSHROOMS. This has happened literally every time I've cooked mushrooms for guests. I finally gave up...but we recently became friends with a couple that LOVES mushrooms. Whoot! This soup looks delish.

    It sounds delicious! I make mine with milk instead of cream and add 1 tablespoon of flour dissolved in cold water to thicken it.

      it is found next to the heavy whipping cream. It is half cream half milk. Hope this helps :)

    excellent soup. I didn't have the onion flakes so I opened up a package of onion soup mix and used it instead. It is most excellent. Rich and creamy just as you expect a cream of mushroom soup to be.

    I love mushrooms and I love soup. I always make my soups from scratch and am forever on the outlook for a new and improved recipe for my favourites. This one has to be the best and easiest mushroom soup I have ever made. It is my new go to from now on. Thank you.

    Delicious!
    If you don't have the seasonings or dried onions, I just sauteed 3 pressed garlic cloves toward the end of the mushrooms and used fresh minced onion in the base.
    I'll definitely be making again to eat as is and to add to other recipes.

    I made this tonight exactly by the recipe with the ingredients it called for above. It was wonderful and so very easy. Through some seasoned croutons on top (as I usually do with soups!) and it was wonderful and so very filling!!! It is very thick but that is the way I like it. One could thin it down with more half & half and less heavy cream if they so chose. You could also add more mushrooms!!!! . . . But, It was great just the way it was!!
