I hope you all had such a wonderful Easter holiday. We had such a great time gathering together with both sides of our family and eating delicious food.
Good food is a must when my family gathers together. Side dishes are such a key part to a good meal in my opinion. This is what people load up on to compliment the main dish and you want it to be a standout.
These Garlic Butter Herb Carrots are absolutely FANTASTIC! The flavor is so perfect without being to overbearing. It has a lightness about it but the garlic and herbs combine together to really make this side dish a knock out!
HOW LONG SHOULD I COOK MY CARROTS?
About 8-10 minutes for sautéing. How tender to cook your carrots is totally a personal preference. Some people like their carrots al dente with a bit of a crispness to the bite. Others like them tender and soft. I prefer mine crisp-tender, soft with a bit of a snap and bite to them.
This side dish is a true winner and will be a recipe I revisit time and time again.
- 2½ cups sliced carrots
- ¼ cup butter
- 1 Tablespoon garlic
- 1 Tablespoon fresh dill
- 1 Tablespoon fresh thyme
- 1 teaspoon salt
- ½ teaspoon pepper
- In a large skillet, melt butter over medium high heat and add carrots. Cook for about 4 minutes.
- Add garlic and cook for another 2 minutes.
- Add dill, thyme, salt, and pepper, and cook for another two minutes. Carrots should be fork tender when they are done.
