These cookies are soft, chewy and delicious! The mint flavor is the perfect flavor for the holidays and cookie exchanges!
Cookies
- 1 box devil's food cake mix, dry not prepared
- ½ cup butter, softened
- 2 eggs
Mint Frosting
- ½ cup butter, softened
- 2 cups powdered sugar
- 3 Tablespoons milk
- 1 teaspoon mint extract
- ½ teaspoon salt
- 4 drops green food coloring, optional
Chocolate Ganache Frosting
- 1 cup chocolate chips (milk chocolate or semi-sweet chocolate chips will work)
- ¼ cup heavy cream
Cookies
- Preheat oven to 350 degrees F.
- In a large bowl, beat butter, cake mix and eggs until smooth until dough is formed.
- Roll cookies into 1-inch balls and place on greased cookie sheet.
- Bake at 350 degrees F for 7-9 minutes.
Mint Frosting
- Cream butter in a medium mixing bowl. Add powdered sugar, milk, mint extract, salt and green food coloring. Beat until smooth, adding more powdered sugar and milk as needed to reach desired consistency.
- Frost cool cookies with mint frosting.
Chocolate Ganache
- In a microwave safe bowl, combine chocolate chips and cream. Heat in 30 second increments, stirring in between each increment until smooth.
- Glaze the tops of the mint frosted cookies with the chocolate ganache.
