Sopapilla Bites

Ingredients
  • ½ cup warm (110 degrees) water
  • 1 envelope (2½ teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • ½ cup warm milk
  • 2 tablespoons canola oil, plus more for frying
  • 2¾ cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, for basting
  • confectioners' sugar, for dusting
  • honey
Instructions
  1. In the bowl of your stand mixer, combine water and yeast. Let sit for 10-15 minutes, until bubbly.
  2. With the dough hook attached, add sugar, milk and 2 tablespoons canola oil.
  3. Mix in flour and salt until a smooth dough forms, about 2 minutes. Remove dough from the bowl, form into a ball, and place on a floured surface. Let rest for 5-10 minutes while you heat the canola oil for frying.
  4. In a heavy-bottom skillet, bring about 2 inches of canola oil to 350 degrees F. Tear off small pieces of dough (about 2 tablespoons) and drop into the hot oil. Fry 4-5 pieces at a time, about 2 minutes per side. Remove from the skillet and baste with melted butter while still hot. Dust sopapillas with confectioners' sugar and serve with honey.
