Banana-Kissed Nutella Bars

Hello again! Today we are taking a moment to appreciate the wonderfulness that is Nutella, aka the best chocolate hazelnut spread around. And when I start to talk about Nutella, bananas need to be included. The combination of Nutella and bananas is almost like peanut butter & jelly or macaroni & cheese for me. Either one is infinitely better with the addition of the other.

Banana Nutella Bars... these are an absolutely fabulous flavor combination and the perfect texture!

When I started out to make this recipe, I thought I’d end up with simple yet delicious chocolate bars. Plain and straightforward. But when I spotted the overly ripe bananas on my counter that were practically begging me to use them, I just couldn’t refuse. Boy, did I make the right decision.

These bars are the prime example of why those two ingredients work so well together. The richness and fudge-like texture of the bars is wonderfully complimented and lightened up by the thinner banana layer. I could go on and on about them, but I suggest you try them out for yourself ;). You will not be sorry.

Banana-Kissed Nutella Bars

Ingredients
  • 1 stick unsalted butter, at room temperature
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1½ teaspoon vanilla extract
  • 1 medium ripe banana, mashed up
  • 1¾ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ cup nutella
  • 2 tablespoons unsweetened cocoa powder
Instructions
  1. Preheat oven to 350 degrees F. Line an 8-x-8 inch baking pan with aluminum foil and spray with nonstick cooking spray. Set aside.
  2. In the bowl of your stand mixer, cream together butter, brown sugar and granulated sugar. Add egg, vanilla and mashed-up banana and mix until incorporated. Mix in flour, salt, and baking powder until combined. Remove ½ cup of batter from the bowl and set aside.
  3. Finally, add nutella to the batter in the bowl and mix until combined. Mix in cocoa powder until just incorporated. Transfer batter to the prepared baking pan and top with the remaining white batter. Try to spread it somewhat evenly, but it doesn't have to be perfect. Place in the oven and bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Let cool completely before cutting into bars.

    I have just discovered this recipe for Banana and Nutella Bars and my mouth wont stop watering. As an Aussie I need to ask you how many grams are in a stick of butter so I can get started.

      A stick of butter is 4 ounces or 113 grams.

    Easy and delicious.
    Of course, I had to tinker. I didn't do the two layer thing; I just mixed the Nutella into the batter, smoothed in the pan and baked. The baking time seems to vary from batch to batch. The first time I made this, it was around 35 minutes. Sometimes, 40 minutes is just right. Other times, I've gone over 45 minutes. I just keep testing with the toothpick until it comes out just moist and not gummy. I'm assuming it has to do with the moisture of the banana, other things being equal.
    I also don't measure the Nutella, it is probably well over 1 cup!
    After the first time, I've left out the cocoa (forgot to read the recipe). Very subtle chocolate flavor and stronger banana taste. I'm not a fan of banana flavor, but even I think it's good here.
    I've had so many compliments and requests for repeats. Thanks for a good way to use up wilting bananas.
