Saucy Peas and Carrots

Many of you may know this and some might not, but I have some pretty deep Greek roots. My grandma still resides in Greece and I wish I was able to visit her more often than I am able.

This recipe comes from her. It is one my dad grew up on and is one of his personal favorites.

Ingredients
  • ½ cup olive oil
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 32 ounce bag of frozen peas
  • 5 chicken bullion cubes
  • 15 ounce can tomato sauce
  • 15 ounce can of water
  • ½ teaspoon paprika
Instructions
  1. In a large sauce pan place oil, onion, and carrots. Cook for about 2 minutes. Add peas, bullion cubes, tomato sauce, water and paprika. Bring to a boil and reduce heat to low and simmer for 30 to 40 minutes with no lid. Serve warm.
