Carrot Sheet Cake
I love baking in the fall. My kitchen smells amazing and the spices in the air make my heart happy :)
This Carrot Sheet Cake is amazing! It is super moist, full of flavor and the cream cheese frosting is perfection.
Fall is the perfect time to enjoy carrot cake- so why not transform it in to a much simpler sheet cake?! This dessert feeds a crowd and is really easy to make! Plus, kids won’t even know you snuck in a veggie ;)
Carrot Sheet Cake
This cake is DELICIOUS! It is so moist and perfect for fall!

Ingredients
- 1 cup butter, softened
- 2½ cups brown sugar
- 3 eggs
- 3 cups grated carrots
- ½ cup sour cream
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 3½ cups flour
- 4 teaspoons baking powder
- ½ teaspoon salt
Cream cheese frosting:
- 8 oz. softened cream cheese
- ¼ cup butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla
- ¼ cup milk
Instructions
- Preheat oven to 350 degrees F.
- Cream butter and sugar together. Beat in eggs and sour cream. Add carrots and vanilla. Add flour, cinnamon, baking powder, and salt and mix until well combined.
- Pour into a sprayed 13x18 inch cookie sheet. Bake 30 to 35 minutes at 350 degrees F. Cake should spring back to the touch.
Cream Cheese Frosting
- Cream together cream cheese and butter. Beat in powdered sugar, vanilla and milk. Spread over cooled cake. I like to sprinkle a little nutmeg over the top for garnish.
