Nutella Banana Oat Muffins

There is something about the Nutella and Banana combo that makes my heart sing.

I was craving it the other day and decided to turn that combo into some muffins. These were incredible and reminded me of my Nutella Banana Cookies in a way.

My husband gobbled up 3 or 4 of these in one sitting saying I think this needs to be a Sunday Morning regular :) It always makes me happy to hear him rave about my food. If you need a tasty and new breakfast idea, give these a try!

Ingredients
  • 2 cups flour
  • 1 cup old fashioned oats
  • ¼ cup white sugar
  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 bananas, mashed
  • Nutella
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine flour, oats, white sugar, brown sugar, baking powder, baking soda and salt. Stir until ingredients are well combined.
  3. In a large bowl, beat egg. Add milk, oil, vanilla and mashed bananas. Sir to mix ingredients until well combined.
  4. Add flour mixture to the banana mixture and stir until ingredients are incorporated, do no over stir.
  5. Line a 12 muffin pan with 12 muffin tins or spray muffin tin generously with cooking spray.
  6. Divide batter evenly among the 12 muffin tins.
  7. Add a teaspoon of Nutella to the top of each muffin and gently cut Nutella into batter with a knife or toothpick to produce pretty swirls.
  8. Bake at 375 degrees for 17-20 minutes or until toothpick comes out clean.

    I love the Nutella top swirls! So pretty! Reminds me of a recipe I put in my cookbook that I think you'd like! I mean how can you go wrong with Nutella, ever!! :)

    Ok, I don't know where I went wrong, my "batter" doesn't look like batter. It's thick. Like really thick. I followed the instructions. Except I substituted the white sugar with raw organic honey. Could that have been it? They're in the oven now... We will see how they turnout

    I'd just like to check but what kind of flour did you use? I'm from the UK so if you could give me a few examples, I'll try to find the right kind over here.

    not sure if these questions are getting answered, so help from anyone would be greatly appreciated! :) One comment stated that the oats were crunchy, so i'm wondering if putting them in a processor would be okay? also, does anyone know what adjustments would need to be made to make mini muffins/cupcakes? finally, can coconut oil be substituted for vegetable oil? can't wait to make these!

      Old fashioned oats tend to be crunchy. And processing them in the food processor cuts them up like instant oats. And I have made these using coconut oil and coconut milk with no issues.

      I did both, processed the oats, and substituted coconut oil , and they turned out perfectly. Next time, however, I may add a third banana. I also added three milk chocolate chips after swirling in the nutella. I used a toothpick to shove the chips deeper inside, incase the nutella stayed at the top (which it pretty much did, since the "swirling" wasn't very effective). I hope this helps! Oh, and I think it would help to have your coconut oil in liquid form, I forgot to do that, so there were clumps when I mixed it.

      Coconut oil would be perfect and yes in it's liquidy form and make sure it's organic. Warm it just until melted. It's healthy too. But don't buy the kind that is already in a liquid form.

    Made these lovely muffins the other day, my son and husband loved it. It's all gone now, it's really really good. It's worth giving a 5 star rating.. Thank you for sharing this easy to make recipe.. Anyway, I used 4 medium sized bananas and used sunflower oil instead of veg oil..

    can i use regular oat? ive oats at home but im not sure if they are the old fashioned one. i live in Romania and language is a big barrier sadly.

      Where at in Romania are you? And where did you find oats?????? I'm in Tulcea. Searched all over; haven't found them. I miss oatmeal, especially on a cold winter morning!

    Do you use really ripe bananas or fresh ones?

      I used bananas somewhere in between. They were mostly yellow starting to get some brown spots. I know the riper your bananas the more pronounced the flavor will be :)

    i put some Nutella into a bowl and microwaved it for 15-20 seconds to soften it. Made it easier to mix into the dough

    I give this 5 stars. I used 2 big bananas and a steel cut porrige oat blend. My oven is newer and they came out well done at 17mins. I have never baked muffins before and these were easy and sweet. I'm in Canada so it's snowing and -35C outside, so I'm eating these with hot coffee, a fuzzy blanket and listening to stories on the radio. Life is good.

    I was so excited about this recipe I told people and forwarded your recipe. I followed the recipe and my batter was so thick. I had to add some more milk so I could stir it. I don't make muffins so I don't know exactly how thick the batter should be. Where did I go wrong following the recipe perfectly?

    These muffins are DELICIOUS! I added a little more Nutella by putting one spoonful of the batter in, swirling in some Nutella then putting another spoonful and more Nutella! Fantastic recipe! Thanks!

    Just made these for a work breakfast. They were great!! Everyone raved at how beautiful they looked as well as how delicious they were! They are just heavy enough and the oats give them the perfect texture. Perfect recipe!

    I tried these muffins today and I would say that they're nice without being great. Am I the only one who found the lack of any sweetness an issue? I followed the recipe exactly and used the sugar amounts as per the recipe but the muffins have absolutely no sweetness at all. I think that more sugar is needed...or are they not supposed to be sweet at all? Just a little bit of sweetness would be good. Also, I baked mine at 375 for 17 minutes and it was a little too long. They are slightly over baked and a little dry. I'll need to lesson the baking time if I do make them again.

    Made these a couple of weeks ago and they turned out dry and bitter. Pretty sure I used new baking powder and baking soda. Such waste of precious nutella. I even made a double batch thinking this was a foolproof recipe.

    This is one of the best muffin recipes I have come across in very long time. They disappear before they even get cold. I'm making another batch right now. I followed the recipe exactly. I wasn't sure about the oats as I only had the big flake kind, but they gI've the muffins even more of a nutty flavor . Absolutely Delicious!

    These muffins are delicious and fun to make. Of course we love Nutella, but we especially liked the added texture of the oatmeal. My only departure from the recipe was to stir the brown sugar into the egg-oil mixture instead of with the dry ingredients. I did include the white sugar with the dry, though. Easy and delicious -- a winner in my books!

    Made these 2 weeks ago and batter was very very thick and the muffins came out too dry once cooked. This time added extra egg and extra banana to mixture to make a better consistency and they turned out much better once cooked

    I made these the other day. After reading the reviews I added an extra banana, however I didn't process the oats in the food processor. I nuked my nutella for 30 seconds to loosen it up. I too unfortunately had problems swirling my nutella, my bake time was 20 minutes Having said that I love the texture of this muffin and it was a huge hit in our house. Thanks for the great recipe!

    These came out great! I used unsweetened, unflavored coconut milk, 1 flax egg, and I didn't have any Nutella, but I did have Cashews! So, I made my own cashew nutella from scratched and used that instead. My batter came out dry too, so I added a tat bit more coconut milk and they came out perfect. Didn't have any large bananas, so I used 2 over ripe medium sized ones, plus 2 mini bananas. Delish!
