Cauliflower “Mashed Potatoes”

It’s going to be fun! This is one recipe I will be sharing at the party today.

These Cauliflower “Mashed Potatoes” are amazing. Here is why.

1. They are a great and healthier alternative to traditional mashed potatoes.

2. They taste similar to mashed potatoes just a little different consistency.

3. They are delicious!

If you are looking for some healthier alternative side dishes to your meals, you might want to consider these! My family loved them!

CAULIFLOWER MASHED POTATOES
1 head Cauliflower
1 Tbsp. butter
1/4 cup skim milk
1/2 Tbsp. Chicken Base
1/2 Tbsp. garlic
1/2 Tbsp. chives, chopped
 
Break Cauliflower into large chunks, removing any leaves or greenery.
Boil Cauliflower until it becomes fork tender. Once it reaches fork tender, remove from water and place in a large bowl or blender.
Add 1 Tbsp butter, skim milk, chicken base and garlic.
Beat or blend until smooth.
Stir in chives.
Warm up as necessary.
 
Enjoy!

    I love using mashed cauliflower instead of mashed potatoes! A great way to work in some extra veggies, too, for the family :)

      This is a good substitute for potatoes for those on a low potassium diet.

    We make these all of the time and they are delicious! Make sure to get the moisture out of the cauliflower before mashing. That helps with the consistency.

    i have seen a few recipes for mashed cauliflower. my kids really love steamed cauliflower, so it only makes sense to finally make it! it looks so yummy. gorgeous photos, too!
