I will be offering tips and suggestions while baking 6 DIFFERENT recipes with you :) We will be taking some traditional Christmas favorites and making healthier adjustments to them. It’s going to be fun! This is one recipe I will be sharing at the party today.

These Cauliflower “Mashed Potatoes” are amazing. Here is why.

1. They are a great and healthier alternative to traditional mashed potatoes.

2. They taste similar to mashed potatoes just a little different consistency.

3. They are delicious!

If you are looking for some healthier alternative side dishes to your meals, you might want to consider these! My family loved them!

CAULIFLOWER MASHED POTATOES
1 head Cauliflower
1 Tbsp. butter
1/4 cup skim milk
1/2 Tbsp. Chicken Base
1/2 Tbsp. garlic
1/2 Tbsp. chives, chopped
 
Break Cauliflower into large chunks, removing any leaves or greenery.
Boil Cauliflower until it becomes fork tender. Once it reaches fork tender, remove from water and place in a large bowl or blender.
Add 1 Tbsp butter, skim milk, chicken base and garlic.
Beat or blend until smooth.
Stir in chives.
Warm up as necessary.
 
Enjoy!

    We make these all of the time and they are delicious! Make sure to get the moisture out of the cauliflower before mashing. That helps with the consistency.

    Sooo… I feel silly asking this, but what is a “chicken base”? Is it like a broth or something?
