Cherry Snowball Cookies

Hi!  My name is Deborah and I am visiting here today from Taste and Tell.  I have been writing about my favorite recipes for the past 5 years, and still have about a million recipes I want to try!!  I’m so glad to be sharing here on Nikki’s blog today!

I have a confession to make.  I don’t really like the winter.  Yeah – I know.  I probably live in the wrong state – Utah – considering we have such a long winter.  I love the state, but the winter gets old pretty darn fast.

But I also have to admit that I love the first part of the winter – the first big snowstorm, cuddling by the fire with a mug of hot cocoa, watching the snow fall outside.  And of course, getting out to play in the snow with the kids is always fun!!  

These cookies are perfect for any holiday cookie exchange.  Not only do they look like the perfect little snowballs, but they taste amazing, too.  I love the little cherry surprise waiting in the middle!!  Plus, I love that they are a little bit different than the normal cookie, so they are sure to stand out on that cookie plate!!


Cherry Snowballs

Makes 36

1 cup butter, at room temperature
1/2 cup powdered sugar
1 tablespoon water
1 teaspoon coconut extract
2 cups all-purpose flour
1 cup quick oats
1/2 teaspoon salt
36 maraschino cherries, drained
2 cups powdered sugar
1/3 cup milk
2 cups sweetened coconut, chopped

Preheat the oven to 350F.

In the bowl of a mixer, cream together the butter, 1/2 cup powdered sugar, water and coconut extract.  In another bowl, mix together the flour, oats and salt.  Add the dry ingredients to the creamed butter mixture and mix just until combined.

Using a tablespoon of dough at a time, roll into a ball, then flatten.  Place a cherry in the center, then wrap the cookie dough around the cherry.  Roll into a ball with the cherry completely covered.  Place on an ungreased baking sheet.  Once all the cookies are rolled, bake until light golden brown, 17-19 minutes.  Let cool completely.

Once cooled, mix together the 2 cups powdered sugar and the milk.  (Add more milk if needed – you want a dipping consistency.)  Completely dip each cookie into the mixture, then roll in the chopped coconut.  Allow to dry completely before serving.

    I had these at a potluck last and they are delicious!
    @Teresa, my daughter is not a fan of coconut either, for her I would skip the powdered sugar and milk mixture and just roll then in powdered sugar while still a bit warm.

    I am in the process of trying to make these and am finding the dough too dry and crumbly (and I followed the directions as per the recipe). There is no way it is going to roll into a ball at all. I really want to make these and have them for Christmas, has anyone else had a problem with the dough?

      Candace - I added a bit more water to the dough to make it hold together better. Just don't add too much, or the dough'll get too sticky!

    I made these today and they turned out great! I don't know if the recipe has been fixed or not to account for the crumbly dough some people complained about, but I followed the measurements exactly and the dough was a fine consistency. Make sure that the butter is softened.

    I used a 1-tablespoon cookie scoop to scoop up balls of dough, then I poked my thumb into the dough , put the cherry in, and molded the dough around the cherry. They look so pretty, and they taste good, although they're a bit messy to eat!

    I made these cookies, they turned out really well. I did not dip them all the way I dunked the tops and then sprinkled coconut on the top, mine had a flat bottom. They are really good.
