Pumpkin Streusel Pudding Cookies
Hi. My name is Nikki, and I am a pudding-cookie-addict.
I can’t get enough of them, as many of you have seen numerous times before on my blog :)
Once upon a time, not that long ago, I made these Pumpkin Streusel Pudding Cookies. My husband came home from work, and after one bite he deemed them as a “hubby favorite.”
These cookies are PERFECT for fall! They are SO SOFT and the streusel topping adds a delicious and perfect finishing touch. Try them out! You will be so glad you did and I know they will become a new fall favorite!

- ¾ cup butter, softened
- ¾ cup brown sugar
- ¼ cup sugar
- 1 small box pumpkin spice instant pudding mix, dry, do not prepare
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking soda
- 2¼ cups flour
- . STREUSEL TOPPING ., .
- ¼ cup butter, cold
- ¼ cup sugar
- ¼ cup brown sugar
- ⅓ cup flour
- ½ tsp. cinnamon
- TO MAKE STREUSEL TOPPING:: Sift together sugar, brown sugar, flour and cinnamon in a medium bowl. Cut in cold butter until small crumbs form. Set aside.
- Cream butter, brown sugar and sugar together in a large bowl.
- Add in dry pumpkin spice instant pudding mix and beat until well combined.
- Add eggs and vanilla and mix well.
- Add flour and baking soda and beat until well combined.
- Roll dough into 1" balls. Gently press some of the streusel topping onto the tops of the rolled dough balls. Place them on a greased baking sheet and bake at 350 degrees F for 8-10 minutes.

I could not find pumping spice pudding anywhere so I just mixed a box of vanilla with pumpkin pie spice and it worked great!

These look amazing but I can't find the pumpkin pudding! Do u have any idea where I can find it or can I use vanilla, a little pumpkin purée & pumpkin pie spice??

I found mine at walmart, either down by the other pudding mixes or by their seasonal baking supplies they typically have out in the aisles. I am sorry you are having trouble hunting this down. I hope I was able to help :) I am not sure how it will turn out with your alternate suggestions. If you try it, let me know how it turns out! I would love to hear about it!

I couldn't find the pumpkin spice pudding either, so I used vanilla pudding and added a tablespoon of pumpkin pie spice. I'm not sure if they taste like they're supposed to, but they were amazing! I'm making them again tonight for my work Halloween party tomorrow!

I love the idea of adding streusel to cookies--it's basically the best part of, well, anything ever baked, so I don't know why I hadn't thought of it before. Thank you for sharing, I can't wait to pop these in my oven for a departmental potluck next week!

I am a huge pumpkin fan, and I love almost all things pumpkin so I was thrilled to see a new pumpkin recipe. These are a little lackluster though. The only thing that gave them much flavor was the topping. They were not bad, but weren't great either.

Hey, Nikki. I love you & your blog so don't hate me for saying this, but my streusel didn't turn out as clumpy as yours. It was rather dry & there was a TON left over. I followed the recipe exactly. Did you use all of it? If not, you might want to consider cutting back the streusel in the recipe by half or thirds. I hate to waste stuff, so I will be using it to top a quick bread, but just wanted to post my experience in case others make it & don't want to have leftover ingredients. The cookies were tasty though. :)

No don't ever be scared to tell me any feedback. I am sorry your streusel didn't turn out. I am not sure why it didn't, but if I come up with something I will let you know. About any left over streusel, you can freeze it and use it on a later date when you need some. That is what I always do if there is any leftovers. When I made these, I actually made a full batch of streusel, using double the ingredients listed and used around half, so I cut it down to the recipe shown. I will have to make these again and see if that is still to much. If so I will adjust the measurements again. Thank you for bringing that to my attention. I appreciate it. But like I said, if you ever do end up with extra streusel in any recipe, just put it in a freezer safe ziplock bag and throw it in the freezer. It lasts awhile in there :) Have a great day!

These are in my oven right now.....i"m very excited about streusel on a cookie! Pretty sure I won't find the pumpkin pudding in Canada so I used butterscotch pudding and i threw in 2 tbsp of pumpkin puree for good measure...maybe not a super great idea because I know that they're not going to spread quite the same.....but will be delicious! :)

I was unable to find the pudding mix as well, but used vanilla instead and added pumpkin pie spice to it and it turned out great!!! Loved it.

hey! i made this last week with my 6yr old who loves pumpkin. this was our first pudding cookie experience. while the cookies were awesome and chewy and moist... they didn't deliver on the pumpkin flavor. tasted more like a sugar cookie, or spice cookie. but still yummy!

I'm so glad I found you site. The pudding cc cookies were amazing! I enjoyed these, but I had a few problems. Just like a previous reviewer, my strudel was more more of just flavored sugar and I had a lot of it. Not sure how to fix this- more butter maybe? Or less flour? My cookies also did not spread out while baking. Usually, the pudding cookies are full of stuff- chocolate chips, cranberries, nuts etc....- and when they don't spread it's not a big deal. I'm not sure why these aren't spreading though- too dry? Whatever, they taste delicious! I might use a little less flour next time though. Thanks for the recipe!

Can I freeze this before baking? If so how? Should i form batter and add strussel and then freeze or should I freeze batter and make strussel right before baking?
