Pumpkin Chocolate Chip Pudding Cookies
Now that it has snowed up here in Utah (yeah, you read that right… SNOWED), I will soon be transitioning away from fall foods seeing as it is feeling much like winter. Before this transition happens, I want to share with you this recipe for Pumpkin Chocolate Chip Pudding Cookies.
This is another cookie, similar to my regular Pumpkin Chocolate Chip Cookies, that screams fall to me. My husband devoured the bag of these I sent with him to work. He loves all things pumpkin, and these sure fit the bill. They are soft and delicious.
The pumpkin spice pudding is seasonal so you better go stock up on it while it lasts. Walmart is the only place I have been able to find it, and it is on display with their seasonal holiday food displays in the aisles. When you grab some, make sure you give these cookies a try!
- ¾ cup butter, softened
- ¾ cup brown sugar
- ¼ cup sugar
- 1 small pkg. pumpkin spice instant pudding mix
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking soda
- 2¼ cup flour
- 1-2 cups semi-sweet chocolate chips
- Cream butter, brown sugar and sugar together in a large bowl.
- Add in dry pumpkin spice instant pudding mix and beat until well combined.
- Add eggs and vanilla and mix well.
- Add flour and baking soda and beat until well combined.
- Stir in chocolate chips until evenly distributed.
- Roll dough into 1" balls. Place them on a greased baking sheet and bake at 350 degrees F for 8-10 minutes.

Made a cookie similar to these but added pecans! I love how subtle the pumpkin flavor is and how soft and chewy the pudding makes the cookies!!

Finding this pudding mix, which I have heard so much about, is probably the only reason I'd have to drive to Walmart. I haven't been to one in years but that may have to change just for this!! They look soooo good!

Just curious, have you ever tried replacing some of the butter with canned pumpkin? I was thinking about trying it but thought that I would ask if it has ever been done before doing so. I hate to waste a whole batch of cookies!

I couldn't find the pumpkin pudding so I used vanilla pudding + about 1.25 tsp pumpkin pie spice. They are amazing but I think I will bump up the spice to 1.75 tsp next time to really get the full pumpkin effect!

I finally found the pudding and bought out the store..lol! I am making these right now and they are so good! I like them better than my normal pumpkin cookies that consists of a can of pumpkin and a spice cake mix. Now onto the pumpkin streusel cookies!

I made these the other day and they turned out good. I followed the recipe to the T but they didn't look anything like the picture. My first batch never flatten and stayed in a boll shape so I flatten the next batches with the bottom of a glass. I think something went wrong with this recipe. They tasted good with a very faint pumpkin taste but I don;t know what went wrong. Did this happen to anyone else?

I know it's been about a year since your post, but mine didn't flatten either. I have a batch in the oven right now that I flattened before baking. My only thought is that I did refrigerate my dough for about an hour before I put them in the oven. :-/

These are awesome! My pumpkin loving husband loved them. He is not a huge fan of the cake-like pumpkin cookies. I did find that they were much better when I added more flour. Like a cup more. My cookies spread way too much until I added more flour, but I am at a high elevation. I always do a test and bake just one cookie first and see if I need to add more flour. I also added pumpkin pie spice to give it more kick. The pudding only has cloves and cinnamon in it....isn't that crazy? It tastes so pumpkin-y. I found mine in the holiday section of wal mart and bought all they had left as I searched high and low for this stuff for a cupcake recipe. That time I ended up doing a vanilla pudding with pumpkin pie spice and it worked well. I will be making these again in a few days for a big party. Thanks for the awesome recipe!

I love these cookies! This recipe has worked better for me than other pudding cookie recipes. Like others though, my cookies never flatten on their own. I flatten them a bit with the back of a spoon, otherwise they stay in the exact same shape they were in when I placed them on the pan. For me that's not a problem at all, I don't care what they look like, they're delicious!

I used a "Pumpkin" pudding mix. That is where the pumpkin flavor comes from.

I went to my local country store (lots of Amish and Morons out here in Missouri), and they have Pumpkin Spice Pie and Pudding mix for way cheaper than Wal*Mart. The only downside is they have a variation of sizes in bags. To measure for a regular pudding I drew a line on a bag of pudding I had in my cupboard and then emptied it into a ziplock baggie, then I just pour in the pudding mix from the country store and measure! Works perfectly and saves me money.

I also could not find the pudding. I used french vanilla pudding and added pumpkin pie spice and 1/2 a cup of canned pumpkin and they still came out great. Didn't flatten but I don't think it matters. Tastes yummy!

The final product turned out good but my dough was so sticky I could barely get it in a ball like shape. I ended up putting the dough in the fridge for a day after the first batch. Helped manage the dough a little better. Cookies are good, less pumpkin more cake like sugar cookie tasting.

I tried these, and I must say they weren't was I was expecting. The flour was far too much, and there is barely even a slight pumpkin spice flavor in the cooke at all. Oh well, live and learn. I hope to try other recipies from you nonetheless, much love.

Do you make a peanut butter pudding cookie? Pudding cookies are my new favorite obsession and I was disappointed that I had to settle for making non-pudding peanut butter cookies yesterday. Nothing will ever be as divine as pudding cookies.

Is Pumpkin Spice the same as Pumpkin Pie Spice. I'm in South Africa and we don't have such spice here but have found a recipe for a Pumpkin Pie Spice. Could I use this? Its got nutmeg and cinnamon and all spice etc.
