Skinny Pancakes

My kids adore all breakfast foods. Breakfast foods make everyone smile I am sure. The down side to traditional breakfast foods, is that they are loaded with sugar or flour, making them sweet and filling.  The only hard thing about this is when you are trying to make every calorie count or make sure your kids are getting some form of nutrition.  I love that these pancakes use egg whites and cottage cheese :)  It gives these pancakes an added element of heathy!

I have made this recipe quite a few times now and my kids love them just as much as I do!

Skinny Pancakes
 
A leaner and more nutritious take on traditional pancakes.
Recipe type: Breakfast
Serves: about 10 pancakes
Ingredients
  • 6 egg whites
  • 1 cup dry rolled oats
  • 1 cup cottage cheese
  • 2 Tbsp. flour
  • 4 tsp. sugar
  • 1 tsp. cinnamon
  • 1½ tsp. vanilla
Instructions
  1. Blend all ingredients in blender until smooth.
  2. Heat skillet or griddle to medium-heat and spray with cooking spray.
  3. Pour about ¼ cup of batter and flip when they start to bubble. Cook other side until pancake is golden brown.
