Coconut Cream Cake

Coconut Cream Cake reminds me of my dad.  It is his absolute favorite and he requests it on his birthday every year.  It is such a sweet and moist cake and I know you are all going to love just as much as my family does!  Give it a try!  It might be the perfect dessert for your summer BBQ.

Coconut Cream Cake

Ingredients 

  • 1 box white cake mix plus ingredients it calls for
  • 1/2 cup sweetened shredded coconut
  • 15 ounces coco lopez cream of coconut
  • 8 ounces cool whip thawed
  • 1 cup toasted coconut

Instructions

  • Prepare white cake mix as directed on box. Stir in 1/2 cup sweetened coconut to batter.
  • Pour into a 9x13 and bake as directed on box.
  • While cake is still hot, poke holes with fork and drizzle Coco Lopez evenly over the top.
  • Chill in refrigerator until cool.
  • Top with cool whip.
  • Sprinkle sweetened coconut (or toasted coconut) over top.

    This a great recipe. I found the Coco Lopez cream of coconut milk near the drink mixes not on the baking aisle. Be sure to get the cream not just coconut milk. On the Coco Lopez website they suggest using a can of sweetened condensed milk as well but it is totally unnecessary unless you want the extra calories.

      I use the milk instead of water in mix. and yes condensed milk does make it moister,also add coconut to mix. Easy,and a winner

    Here in Rochester, MN, this cake is known as Bunnie Cake, made famous by The Canadian Honker Restaurant. I like to make the cake with real whip cream ... not a fan of Cool Whip!

    Quick question: I can't find Coco Lopez Cream of Coconut can I use sweetened condensed milk and coconut oil? or Coco Colada......which is non-alcoholic mix with real cream of coconut?

    This recipe was amazing! I added the milk instead of the water like Linda said. But, i also added an extra cup of sweetened coconut in the batter and went crazy for the top. It was easy to make and came out very moist.

    I made this for a BBQ yesterday and it was a huge hit! So good! Just a note, if you can't find that specific cream of coconut, there is usually another brand in the grocery store near the alcoholic dink mixes.

    Just made this for Father's day! it was a big hit!!! I topped the cake with toasted coconut - slivered almonds and fresh berries! it was gorgeous looking and tasted just as great!!! Served with homemade ice cream!

    Made this today for the 1st time. I love white cake and I love coconut. I am very lucky to work for a grocery chain in the St. Louis Metro that carries hard to find items. This was too darn easy but it sure didn't taste like it was just thrown together. It was AMAZING. When I was shopping all my coworkers asked me to let them know how this tastes. Gonna surprise them with a couple cakes by the time clock when I get back from vacation.

      not sure about Coco Lopez Cream of Coconut, but you can swap the Cool Whip out for sweetened whipped cream. If I hear about anything for the cream of coconut, I will let you know. So sorry about that.

      On another site that posted a similar recipe, some who couldn't get CL Cream of Coconut mixed coconut milk with condensed milk. Another very helpful hint was to make sure to let the cake cool completely after pouring the cream of coconut over the cake. Then, refrigerate at least a couple of hours or even overnight before adding whipped cream topping. Yummy recipe!!!!

    I made this cake for a funeral and it was a big hit, last weekend I made this minus the coconut and cool whip because I was in a big hurry and it is so quick. Well I made it Friday and it went so quick I was threatened if I didn't bring more on Saturday, so I had to make another for saturday! This cake is so easy but it is so awesome with or without icing! It will be your go to cake trust me!
