Zesty Spring Salad

Today I wanted to share with you this yummy salad that is perfect for Spring time!

Seriously… don’t you just want to dive right into that bowl of yumminess?! This salad *almost* tastes as good as a bowl of ice cream. {winks} It’s that good!

{Zesty Spring Salad}

Ingredients:

1/3 cup almond slices or pecans

2 TB sugar

Spring Mix Salad

2 sliced kiwis

1 cup of cut strawberries

1/2 cup of raspberries

1/2 cup of chopped celery

1 avocado sliced

1 pear sliced

zest of orange or mandarin oranges

Dressing:

2/3 cup olive oil

4 TB sugar

zest and juice of 1 large orange

zest and juice of 1 lime

Directions:

Caramelize nuts by mixing with sugar in small skillet over low heat.

Stir for about 5 minutes or until the sugar melts.

Combine dressing ingredients in a mason jar and shake well.

Toss salad ingredients together with the nuts.

    I am really not a salad fan, but maybe that's because none of the salads I have ever eaten have been as tasty looking as this one! this could definitely convert me! I'm so giving this a try when BBQ season rolls around! Thanks for sharing :)
