Crock Pot Beef and Broccoli

I first want to update everyone and thank you all for your prayers.  We were able to come home from the hospital last Thursday and it is SO GOOD to be back!  For those of you that don’t know, my husband came down with Guillain Barre Syndrome (GBS), had to be life flighted from our local hospital to a better suited hospital  for his needs.  In the midst of suffering with heart rate and breathing issues from the GBS, his spleen spontaneously ruptured (no known cause).  He had emergency surgery to remove his spleen upon which the found 6.5 liters of blood pooled into my husband’s abdomen.  He also had to be put on a ventilator.  After many miracles, my husband recovered quickly and physical therapy said we had the okay to head home :)  He still has numbness and tingling in his feet, but is a WALKING miracle.  The doctors told us they have never seen a GBS patient leave as quickly as my husband had, having gone through all he went through.  Thank you all so much for your prayers and thoughts.  I truly believe that all the prayers that went his direction was a huge factor in the miracles that have happened and why we are now home.

Now, we can talk about this amazing dinner!  My husband asked me to deem this recipe as a “Hubby Favorite” on the blog, so here it is.  This meal is absolutely incredible and one we all gobbled up!  We love Chinese food, and I always feel a little bit better eating it when it is homemade and I know the ingredients that go into it.  The best part about this recipe… It is done in the Crock Pot!  That is right!  Put it in and let it cook all day and then serve it up when dinner time rolls around!  Doesn’t get much more perfect than that!


CROCK POT BEEF AND BROCCOLI

1 lb. boneless beef chuck roast, sliced into thin strips
1 cup beef consomme
1/2 cup soy sauce, reduced sodium
1/3 cup brown sugar
1 Tbsp. sesame oil
3 garlic cloves, minced
2 Tbsp. cornstarch
2 Tbsp. water
Fresh broccoli florets (as many as desired)
Hot cooked rice

Place beef in crock pot.
In a small bowl, combine consomme, soy sauce, brown sugar, oil and garlic.  Pour over beef.
Cover and cook on LOW for 6-8 hours.
In a cup, stir cornstarch and water until smooth.  Add to crock pot.  Stir well to combine.
Blanch broccoli florets and add to the crock pot.  Stir to combine.
Cover and cook for an additional 20 minutes on HIGH or until thickened.
Serve over hot, cooked rice.

    Praise The Lord for your husbands recovery! My Daddy went through close to the same thing in January of '10. We thought he just had a kidney stone and little did we know his whole body was mysteriously shutting down. He was n ICU for 8 days and on a ventilator for 5. I cried every time I saw him, but Praise ate Lord again. My Dad is a miracle as well. He fully recovered! As for this meal, I will certainly have to try it,

    That's so awesome about your husband - praise the Lord - our God is awesome! Now, about the recipe... I live in rural, southern MS and cannot find consomme in my grocery stores. Is there a substitute? How is consomme different from broth? We too LOVE Chinese food but can't get it in our tiny town (that's still 10 miles from my house), so I'd LOVE to try to make it more often at home and this recipe looks fantastic!

And a quick question....because I know my husband would love this....can you use frozen broccoli instead of fresh and blanched broccoli? I am all about saving steps!!

    Hey Rose...I have a similar problem...we do have a grocery store in town (five minutes in the car) BUT they don't stock EVERYTHING you need! They do however have consomme but I have forgotten to get and don't have time to go this morning AND get this going before I go to work. SO I am going to try beef stock! Will let you know how it turns out LOL!

    OK Rose...I fibbed! Just went to the cupboard and I had purchased some beef broth (It's an age thing - I forgot!)! anyhow I opened it and it's exactly the same thing as beef consomme as far as I am concerned (Consomme just means clear soup, which is what broth is also). so I have thrown that in. I think you probably could use a light/weakish beef stock if you couldn't get this...but not like a whole stock cube so it's dark...I think that would be too salty with the soy as well! Hope this helps

When I was about your age we were living in Hawaii, top Neurologists diagnosed our baby with spinal muscular atrophy with a 99.9% accuracy rate we were told our baby would die soon from SMA, we had everyone we knew loved God, pray for him and laid hands on him in prayer, he did not die. He showed no signs of SMA after two weeks of praying and believing in Gods miracles. He is now 23 and such a blessing to us all! He is the sweetest young man you could ever meet! God's blessings to you!

    I just wanted you to know that I am glad your husband is okay....My son had guillain-barre syndrome 3 years ago at age 12...he was also a miracle...after 10 days in the hospital in May he came home with a wheelchair and a walker....by the beginning of the school year at the end of August he was able to go back to school without both....He had a form called the Miller-Fischer variant in which his eyes were paralyzed as well...it was such a scary time for me so I know what you went through...

      Hi Kim. Beef comsomme is very similar to beef broth. It can be found in the soup aisle. Just look in the good old Campbell soup section. Does anyone know the serving size to this recipe? I will be serving 5 adults, and wasn't sure if I should double the recipe.

    I made this today. I was really looking forward to it, but it did not work out. I cooked it on low for 8 hours. Turns out that way too much. The broccoli was overcooked. You know that smell you smell when broccoli overcooks. Such a gross smell. My husband says he even thinks the beef was overcooked as well. Has this happened to anyone else? Im sure Im not the only one who has cooked this for 8 hours, but yet no one has mentioned this problem.

    Did I do something wrong or what?

    If I ever make this again, I think I will not cut up the beef when I put it in. Then when I go home, take the beef out. I will take frozen broccoli, steam it in the microwave and than add it to the crock pot. Then cut up the beef and put it back into the crock pot.

    I have never cooked broccoli in the crock pot before. And this is why. I honestly dont think you can cook it for 6 to 8 hours without it overcooking.

      It says to cook the beef on low for 6-8 hours and then at the end only cook the broccoli in the crock pot for 20 min on high while you're thickening the sauce. Try again- you won't be disappointed :)

    I know I'm super late but I wanted to reach out to say thanks for the recipe but also follow up with your husbands GBS recovery. My husband also suffered from GBS in which he was completely paralyzed from the neck down, and yes by God's grace he has recovered but he too still had lingering symptoms.

    Your recipe looks delicious! I am going to make it this week. Beef & Brocolli is one of my favorites.
    Hope your husband is doing well. My 24 year old daughter had GBS when she was 9 years old. She spent 6 weeks in Children's Mercy Hospital in Kansas City and another 3 weeks in outpatient therapy. She recovered 100% and doing quite well. I can sympathize with him and your family and know first hand what he endured. God Bless!
