Pico de Gallo

This is one of the fastest and easiest appetizers or toppings for your Mexican meal you can whip up!  It is amazing and can be easily adapted to your likes and dislikes!  I love Pico de Gallo and so does the rest of my entire family!  Here is how I make mine.

 

PICO DE GALLO

4-5 plum tomatoes, diced
1/2 of a sweet onion, chopped
1/2 bunch cilantro, chopped
juice from 1 large lime
1-2 jalapenos (optional-just adds some extra spice), chopped

Combine all ingredients together in a medium to large bowl.
Stir to mix ingredients together and enjoy!

    I've been making my pico like this for years! It is the best! So fresh and good!! Can't wait until this summer when I can go out in my garden, get the makings for it, and have it for dinner! YUM!

    I love chips and if you eat this with the chips wouldn't that make it healthy? That's what I would like to think:)

    Nikki, if for some reason you have extra pico de gallo, use it as a side dish the next day by mixing it into some warm cooked Jasmine rice. It's phenomenal!!! Serve with fish, mmmmmmm.
