Guacamole

My grandparents live in California.  One of the many reasons I would love to live there again someday is the ability to grow a variety of fruit in your own backyard.  My grandparents have the best of the best in their backyard.  One of the “best” being an avocado tree!  Oh how I would love to have an avocado tree in my backyard!  Seriously.  I could find a way to use avocados for every meal and never get sick of them.  That is how much I love them!One of my favorite ways to eat an avocado is Guacamole!  MMM!  It is a great topping for most any Mexican meal or just to dip some chips in!  We absolutely LOVE it in my home!

GUACAMOLE

3 medium avocados, halved
1 lime, juiced
1/3 cup onion, minced
1 Tbsp. chopped cilantro
1/4 cup of your favorite salsa, (or diced up tomatoes)
kosher salt and fresh pepper

 

Slice avocados in half and take out the pit. Scrape out the pulp from the avocados in a medium bowl and slightly mash with a fork or a potato masher leaving some large chunks. Add lime juice, salt, pepper, cilantro, salsa/tomato and onion and stir to mix thoroughly.

    Guacamole is definitely a favorite of ours too. We always use the cut up tomatoes, but it's difficult in the winter. Beautiful photo!
